A hearty and comforting Dutch Oven Whole Chicken Dinner featuring a perfectly roasted 4-pound chicken seasoned with a blend of herbs and spices, surrounded by tender carrots, potatoes, and onions. This one-pot meal is baked low and slow in a Dutch oven, resulting in juicy meat and caramelized vegetables with minimal effort.

Ingredients

Chicken and Seasoning

  • 4 pound whole chicken
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon rosemary
  • ½ teaspoon thyme
  • 1 tablespoon minced garlic

Vegetables

  • 1 pound carrots
  • 1 pound russet potatoes
  • 1 cup medium yellow onion (peeled and halved)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for slow roasting the chicken and vegetables.
  2. Prepare Chicken: Remove the whole chicken from its packaging, discard any gizzards inside, and pat dry with paper towels to ensure a crispy skin during baking.
  3. Prepare Dutch Oven: Pour the extra virgin olive oil into the bottom of the Dutch oven and spread it evenly to prevent sticking and add flavor.
  4. Prep Vegetables: Wash and thoroughly dry the carrots and russet potatoes. Roughly chop them into ½-inch cubes and add them to the Dutch oven as a base layer.
  5. Add Onions and Garlic: Peel and halve the yellow onion into two large rounds. Add the onion halves and minced garlic evenly over the vegetables in the Dutch oven.
  6. Season Chicken: In a small bowl, combine the black pepper, paprika, salt, rosemary, and thyme. Rub this spice mixture evenly all over the whole chicken to fully coat it.
  7. Assemble in Dutch Oven: Place the seasoned chicken on top of the vegetable mixture in the Dutch oven, positioning the legs and wings upright for even cooking.
  8. Bake Covered: Cover the Dutch oven with its lid or tightly with tinfoil. Place it on the middle oven rack and bake for 1 hour and 45 minutes at 350°F, allowing the chicken and vegetables to cook gently in the steam and heat.
  9. Uncover to Brown: Remove the lid or foil and continue baking uncovered for the last 15 minutes to crisp and brown the chicken skin.
  10. Serve: Once baking is complete, remove the Dutch oven from the oven. Slice the chicken and serve it hot alongside the caramelized carrots, potatoes, and onions for a delicious complete meal.

Notes

  • Resist opening the Dutch oven during cooking until the final 15 minutes to maintain heat and moisture, ensuring the chicken stays juicy and the vegetables cook evenly.
  • If desired, baste the chicken with its juices during the last uncovered baking phase for added flavor and moisture.
  • For a crisper skin, broil the chicken for 2-3 minutes after uncovering, but watch carefully to avoid burning.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
