Ingredients

Cheese

  • 10.5 oz Greek Feta (block)
  • 4 oz Cream Cheese, Cubed
  • 1 Cup Swiss or Parmesan Cheese

Vegetables & Aromatics

  • 14 oz Artichoke Hearts, Chopped
  • 1 Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 6 oz Baby Spinach, Chopped

Oils & Seasonings

  • 4 tbsp Olive Oil (divided)
  • Pepper, to taste
  • 1 tsp 21 Seasoning Salute

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the dip evenly.
  2. Prepare Baking Dish: In a baking dish, add 2 tablespoons of olive oil and toss in the chopped artichokes, onions, and minced garlic to coat them well.
  3. Add Cream Cheese: Place the cubed cream cheese evenly among the vegetable mixture in the dish.
  4. Arrange Feta: Place the block of Greek feta in the center of the baking dish, then drizzle the remaining 2 tablespoons of olive oil over the top. Season with pepper and 21 Seasoning Salute for added flavor.
  5. Bake First Phase: Bake the dish in the oven for 25 minutes, allowing the cheeses to soften and the flavors to meld.
  6. Combine Mixture: Remove the dish from the oven carefully, then stir the baked feta into the artichoke and onion mixture until it is well combined and creamy.
  7. Add Spinach and Cheese: Stir in the chopped baby spinach and the cup of Swiss or Parmesan cheese until the mixture is evenly blended.
  8. Bake Second Phase: Return the dish to the oven and bake for an additional 10 minutes to wilt the spinach and melt the cheese.
  9. Cool and Serve: Let the dip cool for 5 minutes before serving to allow it to set slightly for optimal texture and flavor.

Notes

  • Use full-fat cream cheese and feta for the creamiest texture.
  • 21 Seasoning Salute is a spice blend; if unavailable, substitute with a mix of garlic powder, onion powder, dried herbs, and pepper.
  • Feel free to swap Swiss or Parmesan cheese with mozzarella or cheddar for a different flavor profile.
  • Serve with toasted baguette slices, pita chips, or vegetable sticks for dipping.
  • This dip can be prepared ahead and baked just before serving.
