Ingredients

Baked Brioche Casserole

  • 1 loaf brioche bread diced (about 4-6 cups)
  • 6 eggs
  • 2 ½ cups whole milk
  • ¼ cup maple syrup or agave syrup
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg

Blueberry Sauce

  • 3 cups fresh blueberries, divided
  • 1 tablespoon agave
  • 1 cup water

Toppings

  • Powdered sugar (optional for serving)

Instructions

  1. Make Blueberry Sauce: Combine 2 cups of fresh blueberries, 1 teaspoon agave, and 1 cup water in a saucepan over medium-high heat. Cook for 5-6 minutes until bubbly, then gently break up the blueberries using the back of a wooden spoon. Reduce heat and continue cooking for another 5-7 minutes until the sauce thickens and reduces. Remove from heat and set aside.
  2. Prepare Custard Mixture: In a large mixing bowl, whisk together 6 eggs, 2 ½ cups whole milk, ¼ cup maple or agave syrup, 2 teaspoons vanilla extract, ⅛ teaspoon salt, 1 teaspoon cinnamon, and ½ teaspoon nutmeg until smooth and evenly combined.
  3. Assemble Casserole: Place the diced brioche bread evenly into a 9×13 casserole dish. Pour the prepared custard mixture over the bread, gently pressing the pieces down so they absorb the liquid thoroughly. Scatter the remaining 1 cup fresh blueberries evenly on top.
  4. Bake the Casserole: Preheat the oven to 350°F (175°C). Bake the casserole for 35-40 minutes or until the center is set and no longer jiggly, and the edges turn golden brown.
  5. Serve: When ready to serve, drizzle the warm blueberry sauce over the casserole and sprinkle with powdered sugar if desired. Enjoy your delicious blueberry brioche French toast casserole!

Notes

  • Use slightly stale brioche bread for best texture, or dry fresh bread in the oven at 225°F (107°C) for 22-25 minutes to dry it out.
  • Don’t skimp on the cinnamon and nutmeg; these spices give the dish its signature warm and comforting flavor.
  • Get creative with toppings—try adding fresh fruits, nuts, or a drizzle of chocolate sauce for an indulgent twist.
