Ingredients

For the Salad

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 2–4 tablespoons store-bought taco seasoning (or homemade, see notes)
  • 2 bunches romaine lettuce (about 4–5 cups), sliced thin
  • ½ large red onion, sliced thin (about ½ cup)
  • 1 cup cherry tomatoes, sliced
  • 1 large ripe avocado, peeled and diced into 1-inch pieces
  • 1 cup corn (fresh cut from corn on the cob)
  • ½ cup shredded Mexican blend or cheddar cheese

For the Creamy Cilantro Lime Dressing

  • 2 cups packed fresh cilantro
  • ½ ripe avocado, peeled and sliced
  • ¼ cup fresh squeezed lime juice plus zest of 1 lime
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar or rice wine vinegar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Other

  • Tortilla chips (for serving)
  • Salsa (optional, for serving)
  • Sour cream (optional, for serving)

Instructions

  1. Cook the chicken: Heat a skillet over medium heat and add 1 tablespoon of olive oil. Add the ground chicken, breaking it up with a spoon, and cook for a few minutes until most of the pink color disappears. Sprinkle the taco seasoning over the chicken, toss to coat evenly, and continue cooking until the chicken is golden brown and fully cooked, about 5–6 minutes. Remove from heat and set aside.
  2. Make the cilantro lime dressing: In a food processor, combine 2 cups packed fresh cilantro, ½ sliced avocado, ¼ cup fresh lime juice plus lime zest, ¼ cup olive oil, 2 tablespoons vinegar, 1 tablespoon Dijon mustard, and salt and pepper to taste. Pulse on high until the dressing is creamy and smooth. Adjust seasoning if needed.
  3. Assemble the salad: In a large bowl, add the thinly sliced romaine lettuce. Top with sliced cherry tomatoes, diced avocado, corn, sliced red onion, the cooked taco-seasoned ground chicken, and shredded cheese.
  4. Serve: Drizzle the creamy cilantro lime dressing generously over the entire salad. Serve immediately with your favorite tortilla chips on the side, and optionally with salsa or sour cream for added flavor.

Notes

  • You can substitute ground chicken with ground turkey, crumbled tofu, or beans for a meat-free version.
  • Swap the romaine lettuce for spinach or kale for a different green base.
  • Make it dairy-free by using dairy-free cheese or leaving out the cheese entirely.
  • Add more vegetables such as diced bell peppers or roasted sweet potatoes for extra nutrition.
  • To make your own taco seasoning, combine 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon paprika, ½ teaspoon onion powder, ½ teaspoon garlic powder, ½ teaspoon oregano, ½ teaspoon salt, and ¼ teaspoon black pepper.
  • Optional toppings include salsa and sour cream to enhance flavor.
  • For a different protein, use air fryer boneless chicken breasts, which take about 20 minutes.
  • Store salad ingredients separately in airtight containers in the refrigerator for up to 4 days. Assemble before serving to keep ingredients fresh.
