A simple and delicious creamy lemon caper pasta that combines the tangy freshness of lemon with the briny punch of capers, all coated in a luscious creamy sauce made without wine. Perfect for a quick weeknight dinner, this pasta features al dente spaghetti tossed with a silky blend of heavy cream, parmesan, garlic, and red chili flakes, topped with crispy golden capers for a delightful crunch.

Ingredients

Pasta

  • 2 oz Spaghetti

Sauce and Toppings

  • 1 tbsp Capers (packed in brine, drained)
  • 1/4 tsp Red chilli flakes
  • 3 cloves Garlic (finely minced)
  • 1/2 Lemon (juiced)
  • 1/4 cup Heavy cream
  • 1/4 cup Parmesan cheese (grated)
  • 1 tbsp Olive oil

Instructions

  1. Cook the Spaghetti: Boil the spaghetti according to package instructions until al dente—meaning cooked through but still firm to the bite. Reserve ¼ cup of the pasta water before draining the pasta. Set the cooked spaghetti aside.
  2. Crisp the Capers: While the pasta cooks, heat a large skillet over medium heat and add 1 tablespoon of olive oil. Add the drained capers and let them crisp up until lightly golden brown, tossing occasionally to prevent burning. Remove and drain on a paper towel.
  3. Sauté Garlic and Chili Flakes: In the same skillet, add the finely minced garlic and red chili flakes. Sauté gently over medium heat until the garlic softens but does not brown to avoid bitterness.
  4. Add Cream and Lemon Juice: Pour the heavy cream and freshly squeezed lemon juice into the skillet. Let the cream cook down for 1 to 2 minutes, stirring gently.
  5. Toss Pasta with Sauce: Add the cooked spaghetti, reserved pasta water, and grated parmesan cheese to the skillet. Toss everything together and cook for another 2 minutes to let the sauce thicken and cling to the pasta.
  6. Finish and Serve: Top the creamy pasta with the crispy capers. Serve immediately and enjoy the balance of creamy, tangy, and crunchy textures.

Notes

  • Be mindful of extra salt: The pasta water, capers, and parmesan are naturally salty, so additional salt is likely unnecessary.
  • Do not burn the garlic: Garlic turns bitter if browned. Lower heat slightly when cooking garlic and watch closely.
  • Give the sauce time to thicken: The cream sauce may appear thin initially but will thicken as it cooks with pasta and parmesan.
  • Prevent curdling: Keep heat low when adding parmesan and stirring lemon juice into cream to avoid curdled sauce.
