This easy Gnocchi Zuppa Toscana recipe is inspired by the Olive Garden classic, combining spicy Italian sausage, tender gnocchi, and fresh kale in a creamy broth. Using store-bought gnocchi and simple ingredients, this comforting soup comes together quickly in about 30 minutes, perfect for a cozy dinner any night of the week.

Ingredients

Soup Base

  • 1 pound ground Italian sausage (spicy recommended)
  • 1 medium white onion, peeled and diced
  • 3 garlic cloves, minced
  • 4 cups chicken stock

Main Ingredients

  • 1 (1-pound) package gnocchi
  • 2 to 3 cups chopped fresh kale
  • 1 cup heavy whipping cream

Seasonings and Toppings

  • Fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional toppings: freshly-grated Parmesan cheese, chopped fresh basil

Instructions

  1. Cook the sausage, onions, and garlic: Add the ground Italian sausage and diced onions to a large stockpot. Cook over medium heat for 8-10 minutes, breaking up the sausage with a wooden spoon until it is browned and the onions are soft. Add the minced garlic and continue cooking for 2 minutes, stirring occasionally to release the garlic’s aroma.
  2. Simmer the soup: Pour in the chicken stock and stir to combine all ingredients. Raise the heat slightly and cook until the soup reaches a gentle simmer.
  3. Add gnocchi, kale, and cream: Stir in the gnocchi, chopped kale, and heavy whipping cream. Cook for approximately 2 minutes or until the gnocchi float to the surface, indicating they are cooked through and tender. Stir occasionally to prevent sticking.
  4. Season the soup: Taste the soup and season with fine sea salt and freshly ground black pepper according to your preference.
  5. Serve: Ladle the soup into bowls and garnish with optional toppings such as freshly grated Parmesan cheese and chopped fresh basil. Serve warm and enjoy your comforting homemade Zuppa Toscana.

Notes

  • This recipe was edited slightly in 2022 to add onions for enhanced flavor and texture.
  • The original recipe included 1 small jar of roasted red peppers (drained and diced), which can be added with the chicken stock if desired for extra sweetness and depth.
  • For a spicier dish, use spicy Italian sausage; for a milder flavor, use sweet Italian sausage.
  • Store-bought gnocchi saves time but fresh gnocchi can be used if available.
  • Adjust kale quantity based on personal preference for greens.
