Ingredients

Egg Mixture

  • 8 large eggs
  • 1 cup low-fat cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Vegetables & Add-ins

  • 1 small onion, finely chopped
  • 1 cup fresh spinach, chopped
  • 1/2 cup diced bell peppers
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh parsley

Optional Toppings

  • Additional shredded cheddar cheese for topping
  • Hot sauce or salsa, to serve

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×9 inch baking dish with cooking spray or butter to prevent sticking.
  2. Sauté Vegetables: In a small skillet, lightly sauté the chopped onion, bell peppers, and garlic over medium heat until softened, about 3-5 minutes. Remove from heat and set aside.
  3. Mix Egg Base: In a large mixing bowl, whisk together eggs, cottage cheese, milk, salt, and black pepper until well combined and smooth.
  4. Add Veggies and Cheese: Fold the sautéed vegetables, chopped spinach, parsley, and shredded cheddar cheese into the egg mixture gently until evenly distributed.
  5. Pour and Bake: Pour the mixture into the prepared baking dish and spread evenly. Optionally sprinkle extra shredded cheddar cheese on top for a golden crust.
  6. Bake: Bake in the preheated oven for 35-40 minutes, or until the egg bake is set in the center and the top is lightly golden.
  7. Cool and Serve: Allow the bake to cool for 5 minutes before slicing. Serve warm with hot sauce or salsa if desired.
