Enhanced with fresh basil, grape tomatoes, and nutritional yeast, it’s a vibrant and healthy option perfect for busy weeknights or when you need a delicious meal in under 30 minutes.

Ingredients

Base Ingredients

  • 8 oz. uncooked gluten-free spaghetti (such as Trader Joe’s Brown Rice & Quinoa Pasta)
  • 1/4 cup extra-virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 cup fresh basil, julienned
  • 1 cup grape tomatoes, sliced into small rounds (about 3 per tomato)
  • 1/4 cup nutritional yeast
  • Salt and pepper, to taste

Optional Toppings

  • Red pepper flakes
  • Vegan parmesan
  • Fresh basil, julienned

Instructions

  1. Cook the Pasta: Cook the gluten-free spaghetti according to the package directions until al dente. Drain and set aside.
  2. Sauté Garlic: While the pasta is cooking, heat a medium pot over medium heat and add the olive oil. Add the minced garlic and sauté for 2-3 minutes until fragrant and tender, making sure not to burn it.
  3. Add Remaining Ingredients: Reduce the heat to low. Stir in the lemon zest, fresh basil, sliced grape tomatoes, and nutritional yeast. Mix well to combine all flavors and allow the mixture to simmer gently for about one minute.
  4. Combine Pasta and Sauce: Add the cooked pasta to the pot with the sauce. Toss thoroughly until the pasta is evenly coated. Season with salt and pepper to taste.
  5. Serve and Garnish: Serve immediately with optional toppings such as red pepper flakes, vegan parmesan, and extra fresh basil to enhance the flavor.

Notes

  • 8 oz. dry pasta yields approximately 4 cups of cooked pasta.
  • You can substitute fresh parmesan cheese if not vegan.
  • Use fresh lemon zest for best zesty flavor.
  • Adjust garlic quantity based on personal preference.
