Ingredients

For the Chicken and Vegetables

  • 2 lb boneless, skinless chicken thighs, cut into small chunks
  • 1 cup red onion and bell pepper or any vegetables of choice, optional
  • Garlic turmeric rice, naan, or salad, to serve
  • Fresh parsley, lemon, and/or yogurt sauce, optional for serving

Chicken Kebab Marinade

  • 1 cup plain yogurt (2% or full fat)
  • 6 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp tomato paste
  • 1 tbsp paprika
  • 1 tsp dried oregano or 1 tbsp fresh oregano
  • 1/2 tsp cumin
  • 2 tsp salt, or to taste
  • 1/2 tsp black pepper

Instructions

  1. Prepare the Marinade: In a large bowl, combine yogurt, minced garlic, olive oil, lemon juice, tomato paste, paprika, oregano, cumin, salt, and black pepper. Stir well to create a smooth marinade.
  2. Marinate the Chicken and Vegetables: Add the chicken chunks and optional vegetables into the marinade. Toss everything until well coated. Cover the bowl and refrigerate for at least 8 hours or preferably overnight to allow flavors to infuse.
  3. Preheat the Oven: Heat your oven to 450°F (230°C). Line a baking tray with aluminum foil or any broiler-safe material for easy cleanup.
  4. Skewer the Chicken and Vegetables: Thread the marinated chicken pieces and vegetables onto metal skewers evenly, leaving a little space between pieces to ensure even cooking.
  5. Bake the Kebabs: Place the skewers on the prepared baking tray and bake in the oven for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Broil for Charred Finish: Switch the oven to broil and cook the kebabs for an additional 2-3 minutes to get a lightly charred and slightly crispy exterior.
  7. Serve: Remove from oven, garnish with fresh parsley or lemon if desired, and serve with garlic turmeric rice, naan, salad, and optional yogurt sauce. Enjoy your flavorful and easy chicken kebabs!

Notes

  • For grilling: Preheat and grease your grill. Grill the kebabs until golden brown, turning skewers occasionally, about 10-15 minutes or until chicken reaches 165°F (74°C).
  • If using wooden skewers, soak them in water for at least 30 minutes before cooking to prevent burning.
  • Optional sides and garnishes like fresh parsley, lemon wedges, and yogurt sauce complement the kebabs well.
  • Ensure to marinate long enough (at least 8 hours) for maximum flavor and tenderness.
