Ingredients

Lentil Rice Base

  • 1 cup Brown or Green Lentils (pick lentils that hold their shape well)
  • 1 cup Long-Grain Rice (use basmati or jasmine for fluffy grains)
  • 4 cloves Garlic (fresh and finely minced)
  • 1 small Onion (chopped small)
  • 3 cups Vegetable Broth or water (broth is preferred for better flavor)
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 teaspoon Cumin (spice mix)
  • 1 teaspoon Paprika (spice mix)
  • ½ teaspoon Turmeric (spice mix)
  • Salt (to taste, season generously)
  • Black Pepper (to taste, season generously)

Optional Garnishes

  • Fresh Parsley or Cilantro (chopped, to taste)
  • Lemon Wedges (for squeezing, to taste)
  • Red Chili Flakes (for a bit of heat, to taste)

Instructions

  1. Heat the oil: In a wide skillet over medium heat, warm the olive oil until it shimmers, signaling it’s hot enough for sautéing.
  2. Sauté aromatics: Add the diced onion and minced garlic to the hot oil, cooking until the onion becomes translucent and fragrant, about 3-4 minutes.
  3. Add spices: Sprinkle in the cumin, paprika, and turmeric. Stir constantly for about 30 seconds to toast the spices and release their aromas without burning.
  4. Add lentils and rice: Stir in the rinsed lentils and long-grain rice, mixing well to coat them evenly with the oil and spices.
  5. Add liquid and seasoning: Pour in the vegetable broth, then season generously with salt and black pepper. Stir briefly and bring the mixture to a gentle boil over medium-high heat.
  6. Simmer covered: Once boiling, reduce the heat to low, cover the skillet, and let it simmer undisturbed for 20-25 minutes, or until the rice and lentils are tender and liquid is absorbed.
  7. Rest: Turn off the heat but keep the lid on. Allow the dish to rest for 5 minutes to finish steaming and firm up.
  8. Fluff and serve: Remove the lid and gently fluff the lentil rice with a fork. Transfer to serving bowls and garnish with chopped parsley or cilantro, a squeeze of lemon juice, and a sprinkle of red chili flakes if desired.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze in a freezer-safe container for up to 3 months.
  • When reheating, add a splash of broth or water to maintain moisture and prevent dryness.
  • Choose lentils that hold their shape well (brown or green) to avoid mushiness.
  • Using vegetable broth instead of water enhances the depth of flavor.
