This Easy Orange Curd Recipe creates a luscious, tangy, and creamy spread made from fresh orange and lemon zest and juice, eggs, butter, and sugar. Perfect as a topping for toast, scones, or desserts, this curd is cooked gently on the stovetop to achieve a smooth, thick consistency in just 15 minutes.

Ingredients

Fruit and Zest

  • 3 oranges (zested and ½ cup fresh juice)
  • 1 lemon (zested and 1 tablespoon fresh juice)

Eggs

  • 2 large eggs
  • 4 egg yolks

Other Ingredients

  • ½ cup butter (1 stick)
  • 1 ½ cups granulated sugar
  • ¼ teaspoon salt

Instructions

  1. Zesting the Fruit: Use a zesting tool to carefully remove the outer colored skin of all three oranges and the lemon, avoiding the bitter white pith underneath. Collect at least 1 tablespoon of orange zest and 1 teaspoon of lemon zest to maximize flavor.
  2. Juicing: Cut 1 to 2 oranges and squeeze out ½ cup of fresh orange juice. Squeeze the lemon to obtain 1 tablespoon of fresh lemon juice. Set these juices aside for cooking.
  3. Combine Ingredients in Saucepot: Place a small saucepot on medium heat. Add the orange juice, lemon juice, all the zest, granulated sugar, whole eggs, egg yolks, butter, and salt into the pot.
  4. Mix and Melt Butter: Whisk the ingredients continuously as the butter begins to melt. Once fully melted, whisk thoroughly to ensure a smooth mixture with no lumps.
  5. Cook the Curd: Bring the mixture to a gentle boil while stirring constantly. When it boils, reduce the heat to maintain a simmer. Continue stirring and simmering for 5 to 6 minutes until the curd thickens, scraping the bottom with a rubber spatula frequently to prevent burning.

Notes

  • Be sure to avoid the white pith when zesting as it tastes bitter and can affect the curd’s flavor.
  • Constant stirring during cooking is essential to prevent lumps and burning.
  • Once thickened, strain the curd for an ultra-smooth texture if desired.
  • Store orange curd in an airtight container in the refrigerator for up to 1 week.
  • Use on toast, scones, pancakes, or as a filling in cakes and pastries.
