This Easy Savory French Toast recipe offers a delicious twist on the classic sweet version, featuring fresh herbs like parsley and thyme, garlic powder, and pepper for a flavorful breakfast or brunch option. Made with challah or baguette bread soaked in a seasoned egg and milk mixture, then pan-fried to golden perfection, it’s perfect served with arugula, avocado slices, or eggs for a satisfying meal.

Ingredients

Main Ingredients

  • 8 slices of challah bread or a baguette (preferably 1-2 days old)
  • 1 cup milk (unsweetened almond milk or any preferred milk)
  • 6 eggs
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons fresh thyme, chopped
  • ½ teaspoon garlic powder or onion powder (or a combination)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons vegetable oil or preferred cooking oil

Optional Toppings

  • Arugula or spinach
  • Sliced avocado
  • Fried or soft-boiled eggs

Instructions

  1. Heat the Skillet: Place a large skillet over medium heat and add a mild flavored oil such as vegetable oil, butter, or margarine. Heat until shimmering.
  2. Prepare the Egg Mixture: In a large bowl or casserole dish, whisk together the eggs, milk, chopped parsley, chopped thyme, garlic powder, salt, and freshly ground black pepper until well combined.
  3. Soak the Bread: Dip each slice of bread into the egg mixture, soaking for 10 to 30 seconds depending on the thickness and dryness of the bread, making sure it absorbs the batter but doesn’t become too soggy.
  4. Cook the French Toast: Once the oil in the skillet is hot and shimmering, transfer soaked bread slices to the skillet in batches without overcrowding. Lower heat to medium-low. Cook each side for 2-3 minutes until golden brown and crispy, flipping only once when the first side is well browned.
  5. Serve: Remove the cooked French toast slices and place them on a serving dish. Serve warm topped with optional arugula or spinach, sliced avocado, and fried or soft-boiled eggs if desired.

Notes

  • Using bread that is 1-2 days old helps it absorb the egg mixture better without falling apart.
  • Adjust soaking time depending on how thick and dry your bread is to prevent sogginess.
  • Monitor the heat carefully to ensure the French toast cooks through without burning.
  • Feel free to use any fresh herbs you like for added flavor.
  • This recipe can be made with any milk, including dairy or plant-based alternatives.
