Ingredients

Bread

  • 14 oz Sourdough Loaf

Garlic Butter Mixture

  • 10 tbsp Unsalted Butter, softened
  • 12 cloves Garlic, peeled
  • 2 tsp Italian seasoning
  • 1/4 tsp Red pepper flakes (optional)
  • 1 tsp Garlic powder
  • 2 tbsp Parsley, roughly chopped, plus more for garnish
  • 1/2 cup Parmesan cheese, grated
  • 1/4 tsp Sea salt
  • Olive oil (enough to cover garlic cloves in ramekin, approx. 2-3 tbsp)

Instructions

  1. Preheat Oven: Preheat your oven to 350℉ (175℃) to prepare for roasting the garlic and baking the bread.
  2. Slice the Bread: Carefully slice the sourdough loaf into 1-inch thick slices without cutting all the way through, so the loaf stays intact. Place the loaf on a parchment paper or foil-lined sheet pan.
  3. Roast Garlic: Place the peeled garlic cloves and optional red pepper flakes in a small ramekin. Cover the garlic with olive oil and place the ramekin inside the oven. Roast for 20-25 minutes until the garlic is fork-tender. Remove and let cool completely.
  4. Prepare Garlic Butter: Once the garlic has cooled, remove it from the oil (reserve the oil for another use if desired). Smash the garlic cloves with a fork. In a small bowl, mix the softened butter, smashed roasted garlic, garlic powder, Italian seasoning, chopped parsley, grated Parmesan cheese, and sea salt until well combined.
  5. Spread Mixture: Using a small offset spatula or butter knife, generously spread the garlic butter mixture into all the slits of the sourdough loaf.
  6. Bake Wrapped: Wrap the prepared bread tightly in foil and bake in the preheated oven for 15 minutes to allow the butter to melt and flavors to meld.
  7. Bake Uncovered: Remove the foil and bake for an additional 5 minutes to crisp up the top and edges, creating a golden crust.
  8. Garnish and Serve: Remove from oven, garnish with extra chopped parsley if desired, slice, and serve warm as a perfect side dish.

Notes

  • Be careful not to slice completely through the bread to keep the loaf intact for easy serving.
  • Roasting the garlic in olive oil mellows its sharpness and adds depth of flavor.
  • Reserved garlic-infused olive oil can be used for salad dressings or drizzling over vegetables.
  • For a spicier version, increase the red pepper flakes.
  • This garlic bread is best served fresh but can be reheated wrapped in foil at 350℉ for 10 minutes.
  • Make sure the butter is softened to ensure easy mixing and spreading.
