Ingredients

Main Ingredients

  • 1 cup uncooked farro
  • 1 lb mixed summer vegetables (e.g., zucchini, bell peppers, eggplant, cherry tomatoes)
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Seasonings

  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Optional Toppings

  • Fresh basil leaves
  • Crumbled feta cheese
  • Toasted pine nuts

Instructions

  1. Cook Farro: Cook the farro according to the package instructions until tender. Once cooked, drain any excess water and rinse the farro under cold water to cool it down. Set aside for assembly.
  2. Prepare Vegetables: Cut the mixed summer vegetables into bite-sized pieces. Toss them in 2 tablespoons of olive oil and season with salt and pepper to taste. Spread the vegetables evenly on a rimmed baking sheet for roasting.
  3. Roast Vegetables: Preheat your oven to 400°F (200°C). Roast the vegetables for 25-30 minutes, or until they become tender and develop a golden color. Once done, remove from the oven and allow them to cool slightly.
  4. Make Dressing: In a small bowl, whisk together lemon juice, 1/4 cup olive oil, minced garlic, dried oregano, salt, and black pepper until well combined and flavorful.
  5. Assemble Salad: In a large mixing bowl, combine the cooled cooked farro and roasted vegetables. Pour the dressing over the mixture and toss well to evenly coat. Garnish with optional fresh basil leaves, crumbled feta cheese, and toasted pine nuts before serving.
