This Easy Sweet Potato Egg Casserole is a hearty and flavorful breakfast dish featuring a savory blend of turkey sausage, sautéed sweet potatoes, bell peppers, and onions baked with a rich egg and mozzarella cheese mixture. Perfect for a nourishing start to the day, it combines wholesome ingredients in a simple casserole that’s both comforting and satisfying.

Ingredients

For the base:

  • 3 garlic cloves (minced)
  • 1 lb uncooked turkey sausage
  • 5 cups cubed sweet potatoes (1-inch cubes)
  • 1 green bell pepper (diced)
  • 1/2 large yellow onion (finely diced)
  • 2 tbsp avocado oil (or olive oil)

For the egg mixture:

  • 1/2 cup milk (whole milk for richness)
  • 10 large eggs
  • 1/2 cup grated mozzarella cheese (Sargento brand recommended)
  • 1 tsp salt
  • 1 tsp dried thyme
  • 1/2 tsp pepper

Instructions

  1. Preheat Oven and Prepare the Baking Dish: Preheat your oven to 350°F (175°C). While the oven heats, chop all the vegetables. Grease a 9×13-inch casserole dish to prevent sticking during baking.
  2. Cook the Vegetables: Heat avocado oil in a Dutch oven or large saucepan. Add diced onion, green bell pepper, and cubed sweet potatoes. Cook for 8-9 minutes, stirring occasionally, until vegetables start to soften. Add minced garlic in the last 1-2 minutes and sauté. Remove vegetables from pan and spread evenly in the prepared casserole dish.
  3. Cook the Sausage: In the same pan, cook the turkey sausage over medium heat until fully cooked, breaking it into small pieces while cooking. Once done, mix the cooked sausage into the vegetables in the casserole dish.
  4. Prepare the Egg Mixture: In a separate bowl, whisk together eggs, milk, dried thyme, salt, pepper, and grated mozzarella cheese until smooth and well combined.
  5. Combine and Bake: Pour the egg mixture evenly over the sausage and vegetables in the casserole dish. Stir gently to distribute the eggs throughout. Bake in the preheated oven for 40-45 minutes or until the center is firm to the touch. Cover loosely with foil if the top browns too quickly.
  6. Cool and Serve: Remove the casserole from the oven and let cool for 15 minutes. This resting time allows flavors to meld and makes it easier to slice and serve. Enjoy your hearty breakfast casserole!

Notes

  • Use whole milk for a richer egg mixture, but you can substitute with lower fat milk if desired.
  • If you prefer a spicier sausage, choose a flavored turkey sausage or add herbs and spices of your choice.
  • To make the recipe dairy-free, omit the cheese or use a plant-based cheese alternative.
  • Make sure to sauté the vegetables and sausage thoroughly to develop flavors before baking.
  • Covering with foil mid-baking prevents over-browning on top.
  • This casserole can be prepared the night before and baked fresh in the morning.
