Ingredients

Peach Filling

  • 6-7 ripe peaches, peeled and sliced
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Zest of 1 lemon
  • Juice of ½ lemon

Cobbler Topping

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup soy milk or other plant-based milk
  • ¼ cup melted vegan butter or coconut oil
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven and prepare baking dish. Preheat your oven to 375°F (190°C) and lightly grease a 9×9 inch baking dish to prevent sticking and ensure even cooking.
  2. Mix peach filling. In a large bowl, combine the peeled and sliced peaches with sugar, cornstarch, vanilla extract, ground cinnamon, nutmeg, lemon zest, and lemon juice. Toss gently until the peach slices are evenly coated with the mixture.
  3. Transfer peach filling. Pour the peach mixture into the prepared baking dish, spreading it out into an even layer for consistent baking.
  4. Combine dry ingredients for topping. In a separate bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to evenly distribute leavening and flavor components.
  5. Mix wet ingredients for topping. In a small bowl, stir together the soy milk, melted vegan butter or coconut oil, and vanilla extract.
  6. Prepare cobbler batter. Pour the wet mixture into the dry ingredients and stir gently just until combined; avoid overmixing to keep the topping light and fluffy.
  7. Assemble topping over peaches. Drop spoonfuls of the cobbler batter across the top of the peach filling, trying to cover as much surface as possible for even browning.
  8. Bake. Place the baking dish in the preheated oven and bake for 35-40 minutes, until the peach filling is bubbly and the cobbler topping turns a golden brown color.
  9. Cool and serve. Remove the cobbler from the oven and let it cool for a few minutes before serving. Enjoy warm, optionally with vegan vanilla ice cream or dairy-free whipped cream for added indulgence.

Notes

  • Gluten-Free Option: Substitute gluten-free all-purpose flour for the regular flour in the cobbler topping to make this recipe gluten-free.
  • Peach Ripeness: Using ripe peaches is key for sweetness and texture. If peaches are underripe, consider adding a bit more sugar to the filling.
  • Storage: Store leftover cobbler covered in the refrigerator for up to 3 days. Reheat before serving.
  • Variations: You can add chopped nuts or a streusel topping for extra texture.
