A vibrant and refreshing Edamame Salad featuring shelled edamame, crisp vegetables, and a flavorful sesame-ginger dressing. Perfect as a light lunch or side dish, this salad combines protein-rich edamame with crunchy carrot, cabbage, and cucumber, enhanced by a tangy and slightly sweet dressing.

Ingredients

Salad

  • 2 cups shelled edamame (fresh or frozen)
  • 1 cup carrot, julienned or shredded
  • 1 cup cabbage, finely shredded
  • 1 cup English or Persian cucumber, diced
  • 2 green onions, thinly sliced
  • 1/4 cup fresh cilantro, chopped

Dressing

  • 2 tablespoons low-sodium soy sauce (or tamari for gluten-free option)
  • 1 tablespoon sesame oil
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon grated fresh ginger

Toppings

  • 1 tablespoon sesame seeds

Instructions

  1. Prepare Edamame: If using frozen edamame, defrost them by running cold water over them in a colander or soaking them submerged in water. Bring a pot of water to a boil, add the edamame, and cook for 3-5 minutes or according to package instructions. Drain and cool under cold water to stop cooking.
  2. Combine Salad Ingredients: In a large mixing bowl, combine the cooked edamame, julienned carrot, shredded cabbage, diced cucumber, thinly sliced green onions, and chopped cilantro.
  3. Make the Dressing: In a separate bowl, whisk together the soy sauce, sesame oil, extra virgin olive oil, rice vinegar, honey, and grated fresh ginger until fully blended and harmonious in flavor.
  4. Toss Salad with Dressing: Pour the dressing over the salad vegetables and edamame. Toss gently to coat all ingredients with the dressing evenly. Cover the bowl and let the salad rest for at least 10-15 minutes to allow the flavors to meld.
  5. Serve: Before serving, toss the salad again to redistribute the dressing. Sprinkle with sesame seeds on top and serve chilled or at room temperature for a fresh and flavorful experience.

Notes

  • Adjust the dressing according to your taste preferences. For a sweeter salad, add more honey.
  • For a tangier dressing, increase the amount of rice vinegar.
  • Check seasoning and add extra soy sauce if more saltiness is desired.
