Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the proper temperature for baking the tart later.
  2. Caramelize Onions: In a large, oven-safe skillet, heat the olive oil and butter over medium heat. Add the thinly sliced onions and cook them, stirring occasionally, for about 20 minutes until they soften and start to become golden and caramelized.
  3. Add Sugar and Thyme: Stir in the brown sugar and thyme leaves, mixing well with the onions. Continue cooking for an additional 5 to 10 minutes until the onions are richly caramelized and have a deep golden-brown color.
  4. Deglaze the Pan: Pour in the white wine and balsamic vinegar while scraping the bottom of the skillet to loosen any browned bits. Add the water if needed. Let the mixture simmer and reduce by about half, allowing the onions to become tender and coated with a glossy sauce. Season with salt and pepper according to taste.
  5. Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet and cut it into a circle slightly larger than the skillet to allow for tucking the edges.
