Fresh Corn Salsa is a vibrant and refreshing no-cook salsa made with raw sweet corn, fresh vegetables, and zesty lime juice. Perfect as a healthy snack or party appetizer, this salsa boasts a balance of sweet, tangy, and spicy flavors, making it irresistible with crunchy tortilla chips.

Ingredients

Fresh Corn Salsa Ingredients

  • 3 cups raw sweet corn (from about 4 ears of corn)
  • 1 cup finely diced red onion (about ½ large red onion)
  • 2 vine-ripe tomatoes (approximately 8 ounces or half a pound; seeded and diced, about 1 cup)
  • 1 orange bell pepper, seeded and diced
  • 1 jalapeño, seeded and finely diced (small for less heat, large for more heat)
  • 2 cloves garlic, minced
  • ¼ to ⅓ cup finely chopped cilantro
  • ¼ cup + 2 tablespoons fresh lime juice (from about 3 limes)
  • 1 teaspoon kosher salt
  • Tortilla chips, for serving

Instructions

  1. Prepare the Corn: Slice the raw sweet corn kernels off the cobs using a serrated knife if possible. Hold the cobs upright in a bowl to catch the kernels and prevent them from scattering.
  2. Chop Vegetables: Finely dice the red onion, seed and dice the vine-ripe tomatoes and orange bell pepper, seed and finely dice the jalapeño, and mince the garlic cloves. Finely chop the cilantro as well.
  3. Combine Ingredients: In a large bowl, combine the sliced corn, diced red onion, tomatoes, bell pepper, jalapeño, minced garlic, and chopped cilantro. Mix them thoroughly to blend the fresh flavors.
  4. Add Lime Juice and Salt: Pour in the fresh lime juice and sprinkle the kosher salt evenly over the salsa mixture. Stir well to ensure all ingredients are evenly coated.
  5. Let Flavors Meld: Serve immediately if desired, or for best results, cover and refrigerate the salsa for at least 30 minutes up to a few hours. Stir occasionally to allow the lime juice and salt to draw out and intensify the flavors.
  6. Serve: Enjoy the fresh corn salsa with tortilla chips as a delicious snack or appetizer.

Notes

  • Substitutions: You can use thawed and drained frozen corn or rinsed and drained canned corn as alternatives to raw corn.
  • Storage: Store in an airtight container in the refrigerator for 3 to 4 days. Note that it will release more juice over time.
  • Freezing: Freezing is not recommended as it negatively affects the texture of the salsa.
