This Fresh Vegan Brie Recipe offers a sweet and tangy flavor with a creamy texture that mimics traditional Brie cheese. Made from soaked raw cashews blended with lemon juice, nutritional yeast, miso paste, and vegetable broth, this delicacy is baked and chilled to perfection. It’s perfect as an appetizer served with fruit and crackers, offering a delicious plant-based alternative for cheese lovers.

Ingredients

Cashew Cheese Base

  • 1 Cup Raw Cashews (150g)
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Nutritional Yeast
  • 2 Tablespoons White Miso Paste
  • ¼ Teaspoon Salt
  • ½ Cup Vegetable Stock/Broth (120ml)

Additional

  • Parchment Paper (for lining ramekins)
  • Rubber Bands (for securing parchment paper)

Instructions

  1. Soak The Cashews: Place the raw cashews in a bowl and pour boiling water over them so they are completely covered. Let them soak for 1 hour to soften, which is essential for achieving a smooth texture.
  2. Prepare Cashews: After soaking, drain the cashews thoroughly and rinse them under cold water to remove any residue.
  3. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the Brie mixture.
  4. Blend Ingredients: Combine the soaked cashews, lemon juice, nutritional yeast, white miso paste, salt, and vegetable stock in a medium-high speed blender. Blend until the mixture is completely smooth with no cashew chunks remaining.
  5. Prepare Ramekins: Line two oven-safe ramekins (approximately 3 inches in diameter and 2.5 inches deep) with parchment paper. Secure the paper with rubber bands to keep it in place, and remember to remove the rubber bands before baking.
  6. Fill Ramekins: Evenly distribute the vegan Brie mixture into the prepared ramekins, smoothing the tops for an even finish.
  7. Bake: Place the ramekins into the preheated oven and bake for 30 minutes. This helps set the cheese and develop flavors.
  8. Cool And Chill: Allow the baked Brie to cool to room temperature, then transfer the ramekins to the refrigerator to chill completely. Chilling is crucial to help the Brie set properly and develop the right texture.
  9. Serve: Once chilled, carefully remove the vegan Brie from the ramekins and serve it with your choice of fruits and crackers for a delightful vegan appetizer.

  • Nutritional yeast adds a cheesy flavor; adjust the amount to suit your taste preference.
  • Ensure your blender is powerful enough to achieve a completely creamy consistency without lumps.
  • Lining ramekins with parchment paper prevents sticking and makes removal much easier.
  • Chilling the Brie after baking is key to proper setting; avoid rushing this process.
  • For the best flavor and texture, serve the vegan Brie at room temperature.
  • Feel free to experiment by adding herbs or spices like garlic powder, thyme, or rosemary for added variety.
