These Fresh Vegetable Tortilla Roll Ups are a delightful and colorful snack featuring a creamy garlic-dill spread combined with crunchy diced vegetables, cheddar cheese, and green onions, all wrapped in soft flour tortillas. Perfect as a light meal or party appetizer, they are easy to prepare, refreshing, and flavorful.

Ingredients

Cream Cheese Spread

  • 1/2 tsp garlic powder
  • 4 oz cream cheese (softened to room temperature)
  • 1/3 cup mayonnaise
  • 1/4 tsp salt
  • 1/4 tsp dried dill
  • 1/8 tsp black pepper

Roll-Ups

  • 1/2 cup shredded cheddar cheese
  • 2 tbsp sliced green onions
  • 1 cup diced vegetables (broccoli, carrots, red bell pepper, cut into about 1/4-inch pieces)
  • 2 large flour tortillas (10-inch diameter)

Instructions

  1. Prepare the Vegetables and Ingredients: Choose your favorite veggies such as broccoli, carrots, and red bell pepper, then dice them finely into small 1/4-inch pieces to ensure every bite has a bit of all the vegetables. Allow the cream cheese to soften at room temperature so it’s easier to mix.
  2. Mix the Cream Cheese Filling: In a medium bowl, combine the softened cream cheese with mayonnaise, garlic powder, dried dill, salt, and black pepper. Mix thoroughly until the mixture is smooth and well blended.
  3. Prepare and Fill the Tortillas: Warm the tortillas in the microwave for 15-20 seconds to make them more pliable. Evenly spread the cream cheese mixture over each tortilla. Then sprinkle the diced vegetables, shredded cheddar cheese, and sliced green onions evenly on top of the cream cheese layer.
  4. Roll and Secure the Tortillas: Starting from one edge, tightly roll each tortilla until fully wrapped. The cream cheese mixture helps the tortilla adhere to itself. Insert toothpicks to hold each roll together. Place the rolls in the freezer for 20 minutes to set, or store them tightly wrapped in the refrigerator overnight if preparing ahead.
  5. Slice and Serve: Remove the toothpicks and cut each roll into pinwheel slices. Arrange the pinwheels on a serving platter and enjoy as a tasty snack or light meal.

Notes

  • Make sure to finely dice the vegetables for the best texture and easy rolling.
  • Warming the tortillas before filling helps prevent cracking while rolling.
  • Chilling the roll-ups helps them set and makes slicing easier without losing fillings.
  • Can be prepared a day ahead and stored in the refrigerator for convenient snacking.
  • Customize the vegetables to your preference or seasonal availability.
