Ingredients

Sugar Cookie Dough

  • 1 3/4 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp baking powder
  • 1/2 cup unsalted butter, cold and cubed
  • 4 oz cream cheese, cold and cubed
  • 1 teaspoon vanilla extract

Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Fruit Toppings

  • Kiwi, sliced
  • Strawberries, sliced
  • Blueberries
  • Raspberries

Instructions

  1. Prepare the Dough: In a food processor, combine 1 3/4 cups flour, 1/2 cup granulated sugar, and 1/4 tsp baking powder. Add 1/2 cup cold cubed unsalted butter, 4 oz cold cubed cream cheese, and 1 tsp vanilla extract. Pulse about 5 times or until the butter pieces are pea-sized.
  2. Form the Dough Ball: Transfer mixture to a large bowl and knead gently with your hands until it forms a smooth ball, being patient as the butter warms and binds the dough.
  3. Chill the Dough: Shape the dough into a disk on plastic wrap, wrap tightly, and refrigerate for 30 minutes to firm up.
  4. Make the Frosting: In a large bowl, beat together 8 oz softened cream cheese, 2 tbsp softened unsalted butter, 1 cup powdered sugar, and 1 tsp vanilla extract using an electric mixer until smooth and creamy. Set aside.
  5. Roll Out the Dough: Remove dough from fridge, unwrap, and place on a well-floured surface. Sprinkle additional flour on top and roll out to a 14-inch diameter circle.
  6. Transfer and Bake: Move the dough to a 14-inch pizza pan. Prick the dough surface generously with a fork to prevent bubbles, then bake in a preheated oven at 350°F (177°C) for 20 minutes until lightly golden.
  7. Cool and Frost: Allow the cookie crust to cool completely, then spread the prepared cream cheese frosting evenly on top.
  8. Add Fruit Toppings: Arrange sliced strawberries and kiwi along with whole blueberries and raspberries artistically over the frosted crust.
  9. Serve: Enjoy the fruit pizza within a few hours for the best freshness and texture.

Notes

  • Ensure the cookie crust is fully cooled before frosting to prevent melting.
  • Use cold butter and cream cheese for the dough to achieve the best texture.
  • Feel free to substitute or add any fresh seasonal fruits to personalize your fruit pizza.
  • Store any leftovers in the refrigerator covered to maintain freshness, but consume within 1-2 days.
  • Rolling the dough on a floured surface helps prevent sticking.
