These rich and creamy Fudge Popsicles, also known as Fudgesicles, combine milk, cream, cocoa, and chocolate chips into a smooth and decadent frozen treat. Blended to perfection and frozen into molds, they offer an easy homemade alternative to store-bought chocolate popsicles—perfect for a refreshing dessert or snack on a warm day.

Ingredients

Dairy & Chocolate

  • 2 cups milk
  • ¾ cup heavy cream
  • ¾ cup semi-sweet chocolate chips

Sweeteners & Flavors

  • ¼ cup granulated sugar
  • 2 Tablespoons unsweetened cocoa powder
  • 1 ½ teaspoons vanilla extract
  • ¼ teaspoon fine sea salt

Instructions

  1. Heat the base mixture: In a large saucepan, combine the milk, heavy cream, granulated sugar, and unsweetened cocoa powder. Heat over medium heat, stirring occasionally, until the mixture reaches a light simmer. Remove immediately from the heat to prevent boiling.
  2. Melt the chocolate: Place the semi-sweet chocolate chips into a blender. Pour the hot milk mixture over the chocolate and let it sit for a couple of minutes to soften the chips. This makes blending easier and smoother.
  3. Add flavor and blend: Add the vanilla extract and fine sea salt to the blender. Blend the mixture on medium speed until the chocolate is fully melted and the popsicle base is smooth and creamy.
  4. Freeze in molds: Pour the blended chocolate mixture evenly into 8 ice pop molds. Freeze uncovered for about 30 minutes until partially frozen.
  5. Insert sticks and freeze completely: After 30 minutes, insert wooden popsicle sticks into each mold. Return to the freezer and freeze overnight or until completely solid.
  6. Unmold and serve: To release the popsicles from the molds, run the bottom of the molds under warm water for a few seconds or let them sit at room temperature for a few minutes. Serve the popsicles cold and enjoy.

Notes

  • For a dairy-free version, substitute the milk and cream with coconut milk or almond milk, but texture may vary.
  • If you prefer a less sweet popsicle, reduce the sugar slightly.
  • You can add a pinch of cinnamon or espresso powder to deepen the chocolate flavor.
  • Use high-quality semi-sweet chocolate chips for the best flavor and smooth texture.
  • Ensure the mixture is cool enough before blending to prevent damage to your blender.
  • Be careful not to boil the milk mixture, as it can curdle or scorch.
