Ingredients

Raspberry Filling

  • 1/2 cup fresh raspberries (or frozen, thawed)
  • 1/4 cup raspberry jam (high-quality or seedless preferred)
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Chocolate Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips (optional)

Chocolate Coating

  • 8 oz semi-sweet or dark chocolate, melted
  • 1 tablespoon coconut oil (optional for smoother coating)

Instructions

  1. Make the Raspberry Filling: In a small saucepan, combine fresh raspberries, raspberry jam, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, about 5 minutes until it thickens to a jam-like consistency. Remove from heat and cool completely.
  2. Prepare the Chocolate Cookie Dough: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Cream butter and both sugars until light and fluffy (2-3 mins). Add eggs one at a time, then vanilla. Whisk flour, cocoa, baking soda, and salt in a separate bowl. Gradually mix dry into wet ingredients until just combined. Fold in chocolate chips if using. Chill dough 30 minutes.
  3. Assemble the Cookies: Flatten 1 1/2 tablespoons dough in palm. Place 1/2 teaspoon cooled raspberry filling in center. Cover with another dough piece and pinch edges to seal. Roll into ball and place on baking sheet about 2 inches apart. Repeat for all dough and filling.
  4. Bake Cookies: Bake 10-12 minutes until edges set but centers still soft. Let cookies cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.
  5. Coat Cookies in Chocolate: Melt chocolate in microwave stirring every 20-30 seconds until smooth; stir in coconut oil if using. Dip cooled cookie tops into melted chocolate, letting excess drip off. Place on wire rack to set coating at room temperature or refrigerate for quicker setting.

Notes

  • Use seedless raspberry jam for a smoother filling texture.
  • Chilling the dough helps prevent spreading and makes shaping easier.
  • Optional chocolate chips add extra bursts of chocolate in the dough.
  • For a glossy chocolate coat, adding coconut oil helps smooth melting.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
  • Allow cookies to fully cool before chocolate dipping to avoid melting the coating unevenly.
