A vibrant and healthy Garlic Broccoli Stir Fry with Chickpeas that combines fresh broccoli, aromatic garlic and ginger, and a flavorful sauce, perfect for a quick and nutritious meal served over rice.

Ingredients

Broccoli Stir Fry:

  • 1 tablespoon oil (see recipe notes)
  • 1 onion, diced
  • 5 garlic cloves, minced
  • 1 heaped tablespoon fresh ginger, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon smoked paprika
  • Black pepper & sea salt to taste
  • Pinch of cayenne pepper
  • 1 (450 g) medium head of broccoli, cut into small florets
  • ⅓ cup (80 ml) vegetable broth
  • 1 (15 oz) can of chickpeas, rinsed and drained
  • Cooked rice of choice for serving

Sauce:

  • ½ cup (120 ml) water
  • 3 tablespoons soy sauce (gluten-free if needed)
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup or any other sweetener
  • 1 tablespoon cornstarch

Instructions

  1. Prepare Aromatics: Heat oil in a pan over medium heat. Add diced onion, minced ginger, minced garlic, onion powder, paprika, smoked paprika, black pepper, sea salt, and cayenne pepper. Sauté the mixture for 3-4 minutes until fragrant and the onion starts to soften.
  2. Cook Broccoli: Add the broccoli florets and vegetable broth to the pan. Continue frying, stirring occasionally, until the broccoli is tender but still has some firmness, about 10 minutes.
  3. Make Sauce: While the broccoli cooks, whisk together water, soy sauce, vinegar, maple syrup, and cornstarch in a medium bowl until smooth.
  4. Add Sauce and Chickpeas: Pour the prepared sauce into the pan with broccoli and add the rinsed chickpeas. Bring the mixture to a boil, allowing the sauce to simmer and thicken for a few minutes.
  5. Adjust Seasoning: Taste the stir fry and adjust seasoning with additional salt, black pepper, or cayenne pepper if desired.
  6. Serve: Serve the garlic broccoli chickpea stir fry alone or over cooked rice of your choice. Enjoy your healthy and flavorful meal!
