Ingredients

Broccoli Stir Fry:

  • 1 tablespoon oil (see recipe notes)
  • 1 onion, diced
  • 5 garlic cloves, minced
  • 1 heaped tablespoon fresh ginger, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon smoked paprika
  • Black pepper & sea salt, to taste
  • Pinch of cayenne pepper
  • 1 (450 g) medium head of broccoli, cut into small florets
  • ⅓ cup (80 ml) vegetable broth
  • 1 (15 oz) can chickpeas, rinsed and drained
  • Cooked rice of choice, for serving

Sauce:

  • ½ cup (120 ml) water
  • 3 tablespoons soy sauce (gluten-free if needed)
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup or any other sweetener
  • 1 tablespoon cornstarch

Instructions

  1. Heat aromatics and spices: Heat the oil in a pan over medium heat. Add the diced onion, minced ginger, minced garlic, onion powder, paprika, smoked paprika, black pepper, sea salt, and cayenne pepper. Sauté everything together for 3 to 4 minutes until the onions soften and the mixture is fragrant.
  2. Cook broccoli: Add the broccoli florets and vegetable broth to the pan. Continue to fry the mixture, stirring occasionally, until the broccoli is tender but still slightly crisp, about 10 minutes.
  3. Prepare sauce: While the broccoli cooks, combine water, soy sauce, rice vinegar (or balsamic vinegar), maple syrup, and cornstarch in a medium bowl. Whisk thoroughly until the cornstarch is fully dissolved and the sauce is smooth.
  4. Add sauce and chickpeas: Pour the prepared sauce into the pan with broccoli. Add the rinsed and drained chickpeas, stirring to combine everything evenly.
  5. Simmer and thicken: Bring the mixture to a boil, allowing the sauce to come to a simmer. Cook for several more minutes until the sauce thickens and coats the vegetables and chickpeas well.
