A delicious and healthy skillet recipe featuring sautéed garlic mushrooms and crispy cauliflower florets cooked in butter and olive oil, flavored with fresh herbs and vegetable stock for a savory, satisfying side dish or light main.

Ingredients

Butter and Oil

  • 4 tablespoons unsalted butter (or ghee)
  • 1 tablespoon olive oil

Vegetables

  • 1/2 onion, chopped
  • 1/2 head cauliflower, cut into florets
  • 1 pound (500 g) mushrooms, cleaned
  • 4 cloves garlic, minced

Seasonings and Herbs

  • 2 tablespoons low sodium vegetable stock
  • 1 teaspoon fresh thyme leaves, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt and pepper, or to taste

Instructions

  1. Heat butter and oil: Heat the butter and olive oil in a large pan or skillet over medium-high heat to prepare the base for sautéing.
  2. Sauté onions: Add the chopped onion to the pan and cook until softened, about 3 minutes, stirring occasionally.
  3. Cook mushrooms: Add the cleaned mushrooms and cook for 4-5 minutes, turning occasionally to ensure all sides brown well and moisture is released and evaporates to prevent sogginess. Monitor carefully to avoid burning.
  4. Add cauliflower florets: Stir in the cauliflower florets and continue cooking for 8-10 minutes until they turn golden and edges become crispy. Ensure vegetables are well browned for texture and flavor.
  5. Add vegetable stock: Pour in the low sodium vegetable stock and let it cook for about 2 minutes to slightly reduce and concentrate the sauce flavors.
  6. Incorporate herbs and garlic: Add the fresh thyme, half the chopped parsley, and minced garlic to the skillet. Cook for an additional 30 seconds until fragrant, stirring through the vegetables.
  7. Season and serve: Season the dish generously with salt and pepper to taste. Sprinkle the remaining parsley on top and serve the garlic butter mushrooms and cauliflower immediately while hot and flavorful.

Notes

  • Use low sodium vegetable stock to control the saltiness of the dish.
  • Ensure mushrooms are well browned to avoid sogginess in the final dish.
  • The recipe can be made dairy-free by using ghee or a plant-based butter substitute.
  • Fresh herbs greatly enhance the flavor; dry herbs may be substituted if fresh are unavailable but use less.
  • Serve as a side dish or a light vegetarian main.
