Deliciously savory stuffed mushrooms filled with a flavorful mixture of chopped mushroom stems, onion, garlic, panko breadcrumbs, Parmesan cheese, and fresh herbs, baked to golden perfection. A perfect appetizer or side dish for any occasion.

Ingredients

Mushrooms

  • 16 oz white mushrooms (about 24)

Filling

  • 2 tablespoons olive oil, divided (1 teaspoon and 1 tablespoon)
  • ¼ onion, chopped
  • 3 cloves garlic, minced
  • ½ cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon chopped Italian parsley
  • ½ teaspoon fresh thyme leaves
  • 1 teaspoon lemon zest
  • ½ teaspoon kosher salt
  • Dash of crushed red pepper flakes

Instructions

  1. Preheat and prepare baking sheet: Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper and set aside.
  2. Prepare mushrooms: Carefully remove the stems from the mushrooms and finely chop the stems. Set mushroom caps aside for stuffing.
  3. Sauté filling base: In a medium skillet, heat 1 teaspoon of olive oil over medium heat. Add the chopped onion and chopped mushroom stems and cook until tender, about 5 minutes. Add minced garlic and cook for an additional minute. Remove from heat.
  4. Combine filling ingredients: In a medium bowl, mix together the panko breadcrumbs, Parmesan cheese, chopped parsley, fresh thyme leaves, lemon zest, kosher salt, and crushed red pepper flakes. Stir in the sautéed mushroom mixture until well combined.
  5. Stuff mushrooms: Spoon the filling mixture into the mushroom caps, placing them cavity side up on the prepared baking sheet. Drizzle the remaining 1 tablespoon olive oil over the stuffed mushrooms.
  6. Bake: Bake in the preheated oven for 20 to 25 minutes or until mushrooms are tender and the tops are golden brown.
  7. Serve warm: Remove from oven and serve the stuffed mushrooms warm as an appetizer or side dish.

Notes

  • You can substitute panko with regular breadcrumbs if needed.
  • For a nuttier flavor, try using Pecorino Romano instead of Parmesan.
  • Adjust crushed red pepper flakes to control the spice level.
  • These mushrooms can be prepared ahead of time and baked just before serving.
  • To keep them gluten-free, substitute panko with gluten-free breadcrumbs.
