Garlic Sesame Noodles are a flavorful and easy-to-make dish featuring brown rice noodles tossed in a savory sauce made with garlic, toasted sesame oil, soy sauce, tahini, and a hint of sriracha. This recipe is perfect as a quick weeknight meal or a versatile base to add veggies or protein for a hearty dish.

Ingredients

Pasta

  • 12 ounces brown rice noodles

Sauce

  • 1 tablespoon neutral oil (avocado, olive, or refined coconut oil)
  • 6 cloves garlic, minced finely or pressed
  • 1/4 to 1/3 cup low sodium soy sauce or tamari
  • 2 tablespoons vegetable broth
  • 1 ½ tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons tahini
  • 2 teaspoons sriracha
  • ½ teaspoon ground ginger

Garnish (optional)

  • Scallions
  • Red pepper flakes
  • Crushed peanuts

Instructions

  1. Cook the noodles: Bring a large pot of water to a boil and cook the brown rice noodles according to the package instructions until al dente. Drain and set aside.
  2. Prepare the garlic: Mince the garlic cloves very finely or use a garlic press for a fine texture, as the sauce will not be blended.
  3. Sauté the garlic: Heat the neutral oil in a pan over medium heat. Add the minced garlic and sauté until the edges just start to turn golden brown, being careful not to burn it.
  4. Make the sauce: In a bowl, whisk together low sodium soy sauce, vegetable broth, rice vinegar, toasted sesame oil, honey or maple syrup, tahini, sriracha, and ground ginger until smooth and well combined with no visible clumps.
  5. Combine sauce and garlic: Pour the prepared sauce into the pan with the sautéed garlic. Stir to combine and let it simmer gently for 2-3 minutes until the sauce thickens slightly.
  6. Toss noodles with sauce: Add the cooked noodles to the pan with the sauce and toss thoroughly to coat the noodles evenly with the garlic sesame sauce.
  7. Garnish and serve: Garnish the noodles with sliced scallions, red pepper flakes, and crushed peanuts as desired, then serve immediately and enjoy.

Notes

  • Use low sodium soy sauce to control saltiness; regular soy sauce may make the dish too salty. Start with 1/4 cup soy sauce if sensitive to salt and adjust to taste.
  • The neutral oil can be avocado, olive, or refined coconut oil, chosen for sautéing garlic without overpowering flavors.
  • This recipe is mild in spiciness; add more sriracha or red pepper flakes if you prefer heat.
  • Prepared garlic sesame noodles store well for up to 5 days in an airtight container in the refrigerator.
  • When adding vegetables, chicken, tofu, or other proteins, consider doubling the sauce amount for better coating and flavor balance.
