This fragrant Garlic Turmeric Rice is a vibrant and flavorful side dish made by sautéing aromatic garlic and onions, then cooking rice to perfection with turmeric and savory stock. Perfectly paired with marinated chicken kebabs, grilled vegetables, seafood, or meats, it adds a warm golden hue and subtle earthy flavor to any meal.

Ingredients

Main Ingredients

  • 2 tbsp unsalted butter or coconut oil
  • 1/2 medium onion, finely diced
  • 4 cloves garlic, minced
  • 1 tsp turmeric powder
  • 2 cups (370g) basmati rice or your choice of long-grain rice, rinsed and drained
  • 3 cups chicken stock or vegetable stock
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Garnish and Serving Suggestions

  • Parsley for garnish, optional
  • Marinated chicken kebabs or any grilled veggies, seafood, or meat to serve

Instructions

  1. Melt Butter and Sauté Aromatics: Melt the butter or coconut oil in a pot over medium heat. Add the finely diced onion and minced garlic, sautéing for about 1-2 minutes until fragrant and the onions are translucent.
  2. Add Turmeric and Toast Rice: Stir in the turmeric powder to coat the aromatics. Then add the rinsed and drained rice, mixing thoroughly so each grain is evenly coated and lightly toasted, enhancing its nutty flavor.
  3. Add Stock and Season: Pour in the chicken or vegetable stock, then add salt and black pepper to taste. Stir to combine all ingredients evenly.
  4. Cook the Rice: Bring the mixture to a boil. Once boiling, cover the pot with a lid, reduce the heat to low, and let it simmer gently for 15 minutes, allowing the rice to absorb the flavors and cook fully.
  5. Rest and Fluff: Remove the pot from heat but keep it covered. Let it sit for about 5 minutes to steam and finish cooking. Afterward, fluff the rice gently with a fork to separate the grains.
  6. Serve: Optionally garnish with fresh parsley and serve alongside marinated chicken kebabs, grilled vegetables, seafood, or your preferred meat for a complete meal.

Notes

  • Cooked rice is best served fresh for optimal texture and flavor.
  • Leftover rice can be stored in an airtight container for up to 4 days in the refrigerator or up to 3 months in the freezer.
  • To reheat, use a pot on the stove or microwave until the rice is steaming hot. Avoid reheating more than once to maintain quality and safety.
