Discover how to make a flavorful Gingerbread Pie Crust that combines warm spices and molasses for a perfect holiday dessert base. This pie crust recipe is prepared using a food processor for ease and features a unique blend of cinnamon, ginger, and all-spice to give your pie a gingerbread twist. Ideal for pumpkin or sweet potato pies, this crust offers a tender, spiced foundation to elevate your baking.

Ingredients

Dry Ingredients

  • 2 Cups Flour
  • 4 Tablespoons Sugar
  • 1 Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Ginger
  • 1/2 Teaspoon All-Spice

Wet Ingredients

  • 1 Cup Butter (cold or frozen, cut into cubes)
  • 2 Tablespoons Blackstrap Molasses
  • 2 Tablespoons Apple Cider Vinegar
  • 1 Ice Cube (optional, for extra cold apple cider vinegar)

Instructions

  1. Chill The Vinegar: Combine the apple cider vinegar and ice cube in a small bowl to chill the vinegar and keep the dough cold while mixing.
  2. Mix Dry Ingredients: Add flour, sugar, cinnamon, ginger, all-spice, and salt to your food processor. Pulse a few times to evenly distribute the spices and dry ingredients.
  3. Add Butter: Cut the cold or frozen butter into cubes and add to the food processor. Pulse a few times until the butter starts combining with the flour mixture and resembles coarse crumbs.
  4. Incorporate Wet Ingredients: Gradually add the chilled apple cider vinegar and molasses mixture one tablespoon at a time while pulsing the food processor. Continue until the dough forms small bead-like clumps but is not fully combined.
  5. Form Dough Discs: Pour the dough onto a floured surface. Gently bring the dough together and divide it into two discs.
  6. Chill: Wrap the discs tightly in plastic wrap or place them in a zip-lock bag. Refrigerate for at least one hour to firm up the dough.
  7. Shape the Crust: Unlike classic pie crusts, roll the dough out slightly, then use your hands to mold it directly into your pie pan for a rustic finish.
  8. Bake as Desired: Follow your pie recipe’s baking instructions to bake the crust with your filling.

Notes

  • Using cold or frozen butter is key to achieving a flaky crust.
  • The ice cube in vinegar helps keep the dough mixture cold, which prevents the butter from melting too early.
  • This crust is particularly suited for fall and winter pies like pumpkin, sweet potato, or pecan.
  • The dough can be made ahead and refrigerated for up to 48 hours or frozen for longer storage.
  • Adjust spices to taste for a stronger or milder gingerbread flavor.
