This hearty dish combines tender cabbage rolls infused with garlic and onion flavors, complemented by a luscious sauce made from fresh and dried mushrooms, butter, and sour cream. Ideal for cozy dinners, this recipe offers a warm and satisfying taste of traditional Eastern European cuisine.

Ingredients

For the Filling:

  • 1 ½ lb ground beef
  • 1 cup cooked rice
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • Salt and pepper to taste

For the Cabbage Rolls:

  • 1 large white or Savoy cabbage

For the Mushroom Sauce:

  • 1 oz dried mushrooms
  • 8 oz fresh mushrooms, sliced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 mushroom stock cube (or chicken stock cube)
  • 1 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Prepare the Cabbage: Bring a large pot of water to a boil. Remove the core from the cabbage and place the whole head into the pot. Blanch for 2–3 minutes, then carefully peel off the softened outer leaves. Set aside to cool.
  2. Make the Filling: In a large bowl, combine the ground beef, cooked rice, finely chopped onion, minced garlic, and egg. Season generously with salt and pepper and mix until well combined.
  3. Prepare the Mushroom Sauce: Soak the dried mushrooms in hot water for about 15 minutes, then finely chop them. Melt the butter in a skillet over medium heat, add the sliced fresh mushrooms, and sauté until golden brown. Stir in the flour and cook for about 1 minute to form a roux. Gradually add water while stirring to prevent lumps, then add the mushroom or chicken stock cube, chopped dried mushrooms, and sour cream. Season with salt and pepper and simmer the sauce until it thickens.
  4. Assemble the Rolls: Place about 2 tablespoons of the beef mixture onto each cabbage leaf. Fold in the sides and roll up tightly to form neat rolls. Arrange each roll seam-side down in a large casserole dish.
  5. Cook the Gołąbki: Pour the prepared mushroom sauce evenly over the cabbage rolls. Cover the dish with foil and bake in a preheated oven at 350°F (175°C) for 1 hour and 30 minutes until the gołąbki are tender and fully cooked.
  6. Serve: Remove from the oven and serve the gołąbki hot, generously topped with the mushroom sauce. These rolls pair beautifully with mashed potatoes or crusty bread for a complete meal.

Notes

  • Make sure to blanch the cabbage leaves just enough to soften them for easy rolling without tearing.
  • You can substitute ground beef with ground pork or a mix of beef and pork for variation.
  • If you cannot find dried mushrooms, you can omit them and use more fresh mushrooms, though the dried ones add depth of flavor to the sauce.
  • Adjust seasoning of the mushroom sauce at the end to your taste, as stock cubes can be salty.
  • Leftovers are delicious reheated and tastes even better the next day as flavors meld.
