These Goat Cheese and Honey Bites are an elegant and easy appetizer featuring creamy goat cheese nestled in crispy phyllo shells or crostini, baked until warm and soft, then drizzled with sweet honey and topped with crunchy nuts and fresh thyme. Perfect for entertaining or a sophisticated snack.

Ingredients

Appetizer Ingredients

  • 1 log goat cheese (soft, plain), about 4 oz
  • 12 phyllo shells or crostini, store-bought or homemade
  • 2 tbsp honey, plus more for drizzling
  • 2 tbsp crushed walnuts or pistachios, optional topping
  • 1 tsp fresh thyme leaves, optional garnish

Equipment

  • Baking sheet
  • Parchment paper
  • Small spoon or piping bag

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare the base: Place the phyllo shells or crostini evenly spaced on the prepared baking sheet, ensuring they don’t touch for even baking.
  3. Add the goat cheese: Using a small spoon or piping bag, portion about 1 teaspoon of soft goat cheese into each shell or onto each crostini, distributing evenly.
  4. Bake: Place the baking sheet in the oven and bake for 5–8 minutes, or until the goat cheese softens and warms slightly but does not melt completely.
  5. Finish and garnish: Remove the bites from the oven and while still warm, drizzle with additional honey. Optionally sprinkle crushed walnuts or pistachios and fresh thyme leaves on top for extra texture and flavor.
  6. Serve: Serve these bites warm or at room temperature as a delightful appetizer or snack.

Notes

  • You can substitute pistachios for walnuts or omit nuts entirely if preferred.
  • For an extra flavor boost, drizzle with a little lemon zest before baking.
  • If you don’t have phyllo shells, crostini or small toasted bread rounds work perfectly.
  • Store any leftovers in the refrigerator and reheat gently before serving.
