These Greek Feta Turkey Burgers are a flavorful twist on classic turkey burgers, featuring fresh herbs, crumbled feta cheese, and a homemade or store-bought tzatziki sauce. Juicy and tender with a hint of Mediterranean flair, they are perfect for a quick stovetop meal served on your favorite buns with fresh vegetable toppings.

Ingredients

Turkey Burger Mixture

  • 1 pound ground turkey (85% lean, 15% fat)
  • ¼ cup finely chopped Italian parsley
  • 1 tablespoon finely chopped fresh dill
  • ½ teaspoon dried oregano
  • 2 tablespoons very finely diced red onions
  • 2 cloves garlic, minced
  • ¼ cup crumbled feta cheese
  • ½ teaspoon Kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Olive oil for pan

Buns and Toppings

  • 4 burger buns of your choice (sesame or brioche recommended)
  • Tzatziki sauce (homemade or store-bought)
  • Crumbled feta cheese
  • Tomato slices
  • Cucumber slices
  • Onion slices
  • Lettuce

Instructions

  1. Prepare Tzatziki Sauce: Make the tzatziki sauce according to your preferred recipe or use store-bought. This can be made 1-2 days ahead for convenience. Set aside.
  2. Mix Turkey Burger Ingredients: In a large bowl, combine ground turkey, Italian parsley, fresh dill, dried oregano, diced red onions, minced garlic, crumbled feta cheese, Kosher salt, and freshly ground black pepper. Mix gently by hand until ingredients are evenly combined, taking care not to overmix to avoid dry, tough burgers.
  3. Form Patties: Divide the mixture into 4 equal portions. Form each into a ½ inch thick patty, slightly wider than your buns by about ⅓ to ½ inch to account for shrinkage during cooking. Make an indentation in the center of each patty to prevent puffing up as they cook.
  4. Cook Burgers: Heat a few drizzles of olive oil in a large skillet over medium heat. Cook each patty for 4-5 minutes on each side, without pressing down on them to keep moisture inside and ensure juiciness.
  5. Assemble Burgers: On the bottom burger bun, layer lettuce, the cooked turkey burger patty, tzatziki sauce, crumbled feta cheese, tomato slices, cucumber slices, onion slices, more tzatziki sauce, and then the top bun. Serve immediately and enjoy!

Notes

  • Make patties slightly wider than buns (⅓ to ½ inch larger) to compensate for shrinkage during cooking.
  • Create an indentation in the center of patties to avoid puffing up and shrinking.
  • Use ground turkey with 85% lean and 15% fat for juicy burgers.
  • Avoid overmixing the turkey mixture to prevent dry, tough burgers.
  • Keep patties ½ inch thick; thicker patties require longer cooking and may dry out.
  • Cook patties for 4-5 minutes per side over medium heat—longer cooking causes dryness.
  • Do not press burgers while cooking to retain moisture.
  • Store cooked patties in an airtight container in the fridge for up to 3 days.
  • Formed uncooked patties can be refrigerated for up to 2 days with parchment paper between them.
  • To freeze, separate uncooked patties with parchment paper and store in a freezer-safe bag for up to 3 months; thaw overnight in the refrigerator before cooking.
  • Substitutes: yellow or white onions instead of red; your favorite store-bought tzatziki; lettuce wraps instead of buns; preferred bun types like brioche, sesame, or onion rolls.
  • Avoid using dried herbs other than dried oregano as fresh herbs provide best flavor.
