This Greek Lemon Sweet Potatoes recipe features tender, flavorful sweet potatoes roasted in a zesty lemon and oregano marinade with garlic and chicken broth, finished with fresh parsley for a vibrant and savory side dish perfect for any meal.

Ingredients

Sweet Potatoes

  • 1 ½ lb white sweet potatoes

Seasonings and Sauce

  • 1 ½ tsp dried oregano
  • Salt & pepper, omit pepper for AIP
  • 3 tbsp olive oil
  • Juice of two lemons
  • 1 cup chicken broth
  • 3 large cloves garlic, minced
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat the oven to 375°F to ensure a hot environment for roasting the sweet potatoes evenly.
  2. Prepare Sweet Potatoes: Wash and peel the white sweet potatoes. Slice them into rounds and then halve the rounds into half moons for even cooking.
  3. Season Sweet Potatoes: Place the sweet potatoes in a large 9×13” baking dish. Season with salt, pepper (optional for AIP), and dried oregano. Toss well to coat evenly.
  4. Add Olive Oil and Lemon Mixture: Drizzle olive oil over the sweet potatoes and toss again. Add lemon juice, chicken broth, and minced garlic; stir lightly to combine all ingredients without fully mixing the liquid from the bottom.
  5. Initial Roasting: Place the baking dish uncovered in the oven and roast for 15 minutes to start softening the sweet potatoes.
  6. Toss and Continue Roasting: Remove the dish from the oven, toss the sweet potatoes to redistribute flavors, and return to the oven for an additional 25 minutes until tender and infused with lemon and oregano.
  7. Increase Oven Temperature: Turn the oven temperature up to 400°F. Line a large baking sheet with parchment paper to prepare for crisping the potatoes.
  8. Transfer and Crisp: Using a slotted spoon or spatula, transfer the sweet potatoes from the baking dish to the prepared baking sheet. Spoon some of the cooking liquid over the potatoes and toss to coat. Bake for 15-20 minutes, tossing halfway through to achieve desirable crispness.
  9. Finish and Serve: Remove from the oven, toss with freshly chopped parsley for a burst of color and fresh flavor, and serve immediately for the best texture and taste.

Notes

  • For an AIP-compatible version, omit pepper from the seasoning.
  • White sweet potatoes are used for their mild flavor and creamy texture, but orange sweet potatoes can be substituted if preferred.
  • The chicken broth adds depth to the dish, but vegetable broth can be used to make it vegetarian.
  • Tossing multiple times during roasting ensures even cooking and flavorful coating on every piece.
  • Adjust crisping time to personal preference; longer baking yields crispier edges.
