Ingredients

Tofu

  • 1 block extra firm tofu

Produce

  • 2 cups fresh pineapple, cut into 1-inch pieces
  • 1 orange bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 package mushrooms (about 8 oz), stems removed
  • 1 red onion, cut into 1-inch pieces
  • Fresh parsley, for garnish

Sauces & Seasoning

  • 1 cup vegan BBQ sauce

Instructions

  1. Press the Tofu: Place the block of extra firm tofu on a plate lined with paper towels. Cover it with another layer of paper towels and set a heavy object, like a cookbook, on top to press out excess moisture. Let it press for about 15 minutes to ensure it grills well without crumbling.
  2. Prepare the Vegetables and Pineapple: While the tofu is pressing, cut the fresh pineapple, orange, yellow, and green bell peppers, and red onion into 1-inch pieces. Remove the stems from the mushrooms to prepare all the veggies for skewering.
  3. Cut the Tofu: After pressing, slice the tofu into uniform 1-inch cubes to match the size of the vegetables, so they cook evenly on the grill.
  4. Assemble the Kebabs: Thread the pineapple chunks, tofu cubes, bell peppers, mushrooms, and red onion pieces alternately onto metal skewers. Arrange the assembled skewers on a baking sheet for easy handling.
  5. Apply BBQ Sauce: Generously brush the assembled kebabs with vegan BBQ sauce on all sides to add flavor and help caramelize during grilling.
  6. Grill the Kebabs: Preheat your grill to medium heat. Place the skewers on the grill and cook for about 10 minutes, turning halfway through to ensure even cooking and grill marks. After flipping, brush another layer of BBQ sauce on the kebabs to enhance the smoky sweetness.
  7. Finish and Serve: Remove the kebabs from the grill and brush with any remaining BBQ sauce for added tang. Sprinkle freshly chopped parsley on top for a burst of color and freshness. Serve immediately for the best taste and texture.

Notes

  • Pressing the tofu is essential to remove excess moisture and help it absorb the BBQ sauce better, improving texture and flavor after grilling.
  • If you do not have access to a grill, these kebabs can be cooked under a broiler or on a grill pan on the stovetop for similar results.
  • Soak wooden skewers in water for 30 minutes prior to grilling to prevent burning, if you opt not to use metal skewers.
  • This recipe is vegan, dairy-free, and gluten-free if you use gluten-free BBQ sauce.
  • Leftover kebabs can be refrigerated for up to 2 days and reheated gently on the stovetop or in an oven.
