These Grilled Pineapple & Tofu Kebabs are a delightful vegan and vegetarian-friendly dish featuring marinated tofu and fresh vegetables paired with sweet pineapple, all char-grilled to perfection with a tangy vegan BBQ sauce. Perfect for a healthy, colorful, and flavorful meal or appetizer that’s easy to make on the grill.

Ingredients

Tofu

  • 1 block extra firm tofu

Produce

  • 2 cups fresh pineapple, cut into 1-inch pieces
  • 1 orange bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 package mushrooms, stems removed
  • 1 red onion, cut into 1-inch pieces
  • Fresh parsley, for garnish

Sauce

  • 1 cup vegan BBQ sauce

Instructions

  1. Press the tofu: Place the tofu on a paper towel-lined plate, cover it with another paper towel, and place a heavy object such as a cookbook on top to press out excess moisture. Let it sit for about 15 minutes.
  2. Prepare the vegetables and pineapple: While the tofu presses, cut the pineapple, orange, yellow and green bell peppers, and red onion into 1-inch pieces. Remove stems from the mushrooms.
  3. Cut the tofu: Once pressed, cut the tofu into 1-inch pieces to match the size of the vegetables and pineapple.
  4. Assemble the skewers: Thread the tofu, pineapple chunks, bell peppers, mushrooms, and onion pieces alternately onto metal skewers.
  5. Apply the sauce: Place the prepared skewers on a baking sheet and coat them evenly on all sides with the vegan BBQ sauce.
  6. Grill the kebabs: Preheat your grill to medium heat. Grill the skewers for approximately 10 minutes, turning them halfway through the cooking time. After flipping, brush the skewers with another layer of BBQ sauce to enhance flavor and caramelization.
  7. Serve: Remove the kebabs from the grill, brush any remaining BBQ sauce on top, garnish with fresh parsley, and serve immediately for best taste.

Notes

  • Ensure tofu is well pressed to help it absorb the BBQ sauce better and maintain its texture on the grill.
  • If using wooden skewers, soak them in water for at least 30 minutes before assembling to prevent burning.
  • Vegan BBQ sauce can be substituted with your favorite gluten-free or low-sugar BBQ sauce, depending on dietary preferences.
  • Can be served as a main dish with rice or as an appetizer at gatherings.
