Guasacaca is a vibrant Venezuelan avocado-based sauce similar to guacamole but with a distinctive tangy flavor from fresh herbs and vinegar. This versatile condiment combines ripe avocados, fresh cilantro, parsley, bell pepper, and a touch of jalapeño for mild heat, making it a perfect accompaniment for grilled meats, arepas, or as a dipping sauce.

Ingredients

Produce

  • 2 large ripe avocados, seeded (preferably Haas)
  • ½ medium onion, halved
  • 1 small green or yellow bell pepper, seeded and quartered
  • 1-2 medium jalapeños, stemmed and seeded
  • 2 medium cloves garlic
  • 1 cup fresh cilantro, tightly packed
  • ½ cup fresh parsley, tightly packed

Liquids & Seasoning

  • 2 tablespoons rice vinegar
  • 3 tablespoons fresh lime juice, or more to taste
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt, more to taste
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Prepare Ingredients: Gather and prepare all produce by seeding and quartering the bell pepper, halving the onion, roasting jalapeños by stem removal and seeding them, and peeling the garlic cloves to ready them for processing.
  2. Combine in Food Processor: Place all ingredients except the olive oil into the bowl of a food processor. Blend until fairly smooth, or use the pulse function to achieve your desired chunkiness.
  3. Add Olive Oil: Transfer the processed mixture into a bowl and stir in the olive oil thoroughly until it is completely incorporated, giving the sauce a smooth finish.
  4. Adjust Seasonings: Taste the guasacaca and adjust with additional salt, black pepper, lime juice, or rice vinegar if more acidity or seasoning is needed based on your preference.

Notes

  • Use ripe Haas avocados for the creamiest texture and best flavor.
  • Pulsing the food processor allows for chunkier or smoother textures based on preference.
  • Adjust the jalapeño quantity to control the heat level.
  • Guasacaca can be stored in an airtight container refrigerated for up to 2 days; stir well before serving.
  • This sauce pairs excellently with grilled meats, arepas, empanadas, and roasted vegetables.
