These Hatch Green Chile Caesar Chicken Wraps combine tender chicken, crisp romaine, and a zesty homemade Caesar dressing with roasted Hatch green chiles for a flavorful, easy-to-make wrap perfect for lunch or a light dinner.

Ingredients

For the Hatch Green Chile Caesar Dressing:

  • 1/4 cup Mayonnaise (preferably Duke’s)
  • 1/2 teaspoon Dijon Mustard
  • 3 tablespoons finely chopped Roasted Hatch Green Chiles
  • 1 teaspoon fresh Lemon Juice
  • 1 small Garlic Clove, grated or very finely minced
  • 1/2 teaspoon Worcestershire Sauce
  • 2 tablespoons Grated Parmesan Cheese
  • Cracked Black Pepper to taste (at least 1/4 teaspoon)

For the Chicken Caesar Wraps:

  • 2 large Chicken Tenders (about 1/2 pound / 8 ounces)
  • 3 cups packed Chopped Romaine Lettuce
  • 1/3 cup Hatch Green Chile Caesar Dressing
  • 1/3 cup crushed Croutons
  • Cracked Black Pepper (optional)
  • 3 large Burrito-Sized Flour Tortillas

Instructions

  1. Make the Green Chile Caesar Dressing: In a small bowl, combine mayonnaise, Dijon mustard, finely chopped roasted Hatch green chiles, fresh lemon juice, grated garlic clove, Worcestershire sauce, grated Parmesan cheese, and cracked black pepper. Stir thoroughly to mix all ingredients evenly. You can use the dressing immediately or cover and refrigerate it for 15 minutes up to overnight to allow the flavors to blend.
  2. Make the Chicken Caesar Filling: On a large cutting board, layer the chopped romaine lettuce, chicken tenders, and Hatch Green Chile Caesar Dressing. Chop and mix the ingredients together until the chicken and lettuce are finely chopped and the dressing is evenly distributed. Add crushed croutons and optional cracked black pepper, mixing gently to incorporate.
  3. Assemble the Wraps: Lay the flour tortillas flat on a clean surface. Divide the chicken Caesar filling evenly among the tortillas, placing about one heaping cup in the center of each. Spread the filling slightly in a line across the middle of the tortilla, leaving about 1½ to 2 inches border on each side. Fold in the sides of the tortilla, then roll it tightly from one end to form a wrap. Cut each wrap in half and serve immediately for best texture and flavor.

Notes

  • Use pre-cooked crispy chicken tenders from the grocery deli for convenience and added texture.
  • To avoid leftover lettuce and croutons, grab these ingredients directly from a salad bar if available.
  • You can substitute any Caesar dressing by mixing in roasted green chiles if preferred.
  • If Hatch green chiles are unavailable, substitute with any green chiles to keep the smoky flavor.
  • Warming the tortillas to room temperature or slightly warm helps them roll up easily without tearing.
