Ingredients

Chicken and Sauce

  • 1 lb ground chicken
  • 1 TBSP avocado or olive oil
  • 1/2 cup Frank’s Red Hot sauce (plus extra for drizzle and more heat)
  • Salt & pepper, to taste
  • 1 TBSP Ranch seasoning (store-bought or homemade, optional)

Rice

  • 1 cup uncooked rice, or two packets of microwavable 90-second rice

Veggies

  • 1 cup diced celery
  • 1 cup shredded carrots
  • 1 cup halved grape tomatoes
  • 1 cup diced cucumbers

Optional Toppings

  • Crumbled blue cheese

Homemade Ranch Seasoning (Optional)

  • 1 tsp dried parsley
  • 1/2 tsp dried dill weed
  • 1/4 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/4 tsp onion powder
  • 1/8 tsp black pepper
  • 1 tsp dried chives

Instructions

  1. Cook the rice: Prepare the rice according to package instructions. For convenience, microwavable 90-second rice packets can be used for a quick and easy base.
  2. Prep the vegetables: Wash, chop, and dice the celery, shred the carrots, halve the grape tomatoes, and dice the cucumbers. Set all the veggies aside until ready to assemble.
  3. Cook the ground chicken: Heat the avocado or olive oil in a large skillet over medium-low heat. Add the ground chicken, breaking it into small pieces with a spatula as it cooks evenly.
  4. Season the chicken: When the chicken is halfway cooked, sprinkle the Ranch seasoning over it (if using) and stir well to distribute. If you prefer not to use Ranch seasoning, simply season with salt and pepper to taste.
  5. Add Buffalo sauce: Once the chicken is fully cooked, pour in the Buffalo sauce and stir to coat all the chicken pieces evenly. Remove the skillet from heat to prevent overcooking.
  6. Assemble the bowls: Start by spooning rice into each bowl. Top with the Buffalo chicken mixture, followed by the prepared fresh vegetables. Add any optional toppings such as crumbled blue cheese and drizzle extra Buffalo sauce if desired for more heat.

Notes

  • For a quicker meal, use microwavable rice packets instead of cooking rice from scratch.
  • Adjust the amount of Buffalo sauce according to your preferred spice level.
  • Homemade Ranch seasoning can be made in advance and stored for future use.
  • Blue cheese is optional and can be omitted or substituted with a dairy-free alternative for dietary preferences.
  • Feel free to swap out veggies based on seasonal availability or personal preference.
