Ingredients

For the Greek Salsa

  • ½ cucumber, diced
  • ¼ red onion, diced
  • ¼ cup kalamata olives, sliced
  • Salt and pepper to taste
  • Juice of half a lemon
  • 2 tsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped

For the Tzatziki

  • 1 cup coconut yogurt (e.g., Culina brand)
  • 3 tbsp cucumber, diced
  • 2 tsp fresh dill
  • 1 tsp garlic powder
  • Pinch of salt
  • Juice of 1/4 lemon

For the Chicken Bowls

  • 2 tsp olive oil
  • 1 lb ground chicken
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried dill
  • 1 tbsp fresh parsley
  • Juice of 1/2 lemon
  • Salt and pepper to taste (omit pepper for AIP)
  • Rice or cauliflower rice, for serving

Instructions

  1. Prepare the Greek salsa: Combine diced cucumber, red onion, kalamata olives, salt, pepper, lemon juice, fresh dill, and parsley in a bowl. Toss well to mix and set aside in the fridge to chill, allowing flavors to meld.
  2. Make the tzatziki: In a separate bowl, mix coconut yogurt, diced cucumber, fresh dill, garlic powder, salt, and lemon juice. Stir well and refrigerate to chill until ready to serve.
  3. Cook the ground chicken: Heat olive oil in a pan over medium heat. Add the ground chicken and crumble it using a spatula or spoon. Season with garlic powder, onion powder, oregano, dill, parsley, salt, pepper, and lemon juice. Cook thoroughly, stirring often to combine all spices evenly until the chicken is fully cooked and browned.
  4. Assemble the bowls: Spoon rice or cauliflower rice into serving bowls. Divide the cooked ground chicken evenly among the bowls, top each with a generous spoonful of the Greek salsa and a large spoonful of the tzatziki. Serve immediately fresh for a balanced and flavorful meal.

Notes

  • Increase vegetable intake by replacing rice with cauliflower rice, or use a combination of both for texture variety.
  • Substitute rice with cassava orzo for a grain-free option that mimics the texture of pasta or rice.
  • For meal prep, store the rice and chicken separate from the salsa and tzatziki in divided containers to maintain freshness for up to 2-3 days.
