Ingredients

Teriyaki Sauce

Ground Turkey and Vegetables

  • 1 tablespoon Vegetable oil
  • 1/2 cup Diced onion
  • 2 tablespoons Minced garlic
  • 1 pound Ground Turkey
  • 1 cup Broccoli, finely chopped
  • 2 Large carrots, peeled and grated
  • 2 Green onions, diced (for garnish)
  • 4 cups Cooked white or brown rice

Instructions

  1. Prepare the Teriyaki Sauce: In a small bowl, whisk together cornstarch and warm water until the cornstarch is completely dissolved. Set this slurry aside. Then, in a small saucepan over medium heat, gently whisk together soy sauce, water, red wine vinegar, brown and granulated sugars, minced garlic, and ground ginger until the sugars completely dissolve. Gradually whisk in the cornstarch mixture and simmer the sauce until it thickens. Remove from heat and set aside.
  2. Cook the Vegetables and Turkey: Heat vegetable oil in a large skillet over medium-high heat. Add diced onions and cook while stirring frequently until they soften, ensuring not to scorch them by adjusting heat if necessary. Stir in minced garlic, then add the ground turkey. Break apart the turkey with a spatula and cook, stirring occasionally until it is about halfway cooked (approximately 4-5 minutes).
  3. Add Vegetables to Turkey: Incorporate grated carrots and chopped broccoli into the skillet with the turkey. Continue cooking for 5-6 minutes or until the turkey is fully cooked (no longer pink) and the vegetables are tender.
  4. Add Teriyaki Sauce: Pour the prepared teriyaki sauce over the cooked turkey and vegetables in the skillet. Stir to combine and let it simmer for about 5 minutes to meld flavors and thicken further.
  5. Assemble the Rice Bowls: Divide the cooked rice evenly into individual bowls. Spoon the teriyaki turkey and vegetable mixture over the rice. Garnish generously with diced green onions and serve immediately for a warm, comforting meal.
