Ingredients

Main Ingredients

  • About 12-14 cabbage leaves
  • 1 lb ground chicken or beef
  • 2 inch knob ginger, minced
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 2 green onions, chopped
  • 2 tbsp light soy sauce
  • 1 tbsp cooking wine
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • Salt to taste
  • White pepper to taste

Sauce Ingredients

  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 cup water
  • 2 tsp cornstarch mixed with 6 tsp water (cornstarch slurry)

Instructions

  1. Prepare Cabbage Leaves: Remove about 12-14 cabbage leaves from the head and lay them flat. Use a knife to trim out the tough stem at the base of each leaf to make rolling easier.
  2. Blanch the Leaves: Bring a large pot of water to a boil. Blanch each cabbage leaf for about 1 minute or until slightly softened. Set aside to cool while you prepare the filling.
  3. Make the Filling: In a large bowl, combine ground meat, minced ginger, garlic, diced carrot, chopped green onion, light soy sauce, cooking wine, oyster sauce, sesame oil, salt, and white pepper. Mix well until ingredients are thoroughly blended.
  4. Portion the Filling: Divide the meat mixture evenly into 14 portions to match the number of cabbage leaves.
  5. Assemble Rolls: Lay one cabbage leaf flat on a clean surface. Place one portion of filling near the base (stem area). Roll the leaf around the filling like a burrito, tucking in sides as you go. Repeat with remaining leaves and filling.
  6. Steam the Rolls: Place the cabbage rolls in a steamer basket and steam over boiling water for 15-20 minutes until the meat is fully cooked and the cabbage is tender.
  7. Prepare the Sauce: While steaming, combine oyster sauce, soy sauce, and water in a small pan. Heat over medium heat until simmering. Slowly add the cornstarch slurry while stirring continuously until the sauce thickens to your liking. Remove from heat.
  8. Serve: Arrange steamed cabbage rolls on a plate, pour the sauce over them, and optionally garnish with white sesame seeds. Serve immediately and enjoy!

Notes

  • If you prefer, substitute the sauce for plain soy sauce or chili oil for a different flavor profile.
  • Ensure the cabbage leaves are well blanched to avoid tearing during rolling.
  • Use fresh ginger and garlic for best aroma and flavor.
  • The filling can be adjusted to use ground pork, turkey, or a plant-based substitute for variety.
  • Leftovers can be refrigerated for up to 2 days and reheated by steaming gently.
