These Healthy Tofu Spring Rolls are a gluten-free and vegan delight packed with fresh vegetables and lightly spiced tofu. They are wrapped in delicate rice paper and pan-fried to a golden crisp, making them a perfect appetizer or light meal that balances nutrition and flavor.

Ingredients

Vegetables and Tofu

  • 3 cups cabbage, chopped thinly
  • 2 carrots, cut thinly in strips or roughly grated
  • 8oz/ 200g tofu, chopped thinly
  • 3 scallions, thinly chopped
  • 1 cup spinach (optional), chopped
  • 3 cloves garlic, minced or pressed
  • 1 tbsp ginger, grated

Seasonings and Condiments

  • 1 tsp hot paprika or chili powder
  • 2 tbsp tamari sauce
  • 1 1/2 tbsp olive oil
  • Oil for frying (about 1-2 tsp per batch)

Wraps

  • 10 rice paper wrappers

Instructions

  1. Sauté the Tofu: Heat a large nonstick pan with 1 1/2 tbsp olive oil. Add the thinly chopped tofu and sprinkle with hot paprika. Sauté the tofu on both sides for about 3 minutes until lightly browned and flavorful.
  2. Cook the Vegetables: Add cabbage, carrots, spinach (if using), 1 minced clove of garlic, grated ginger, and tamari sauce to the pan. Cover and cook for 3-4 minutes, allowing the vegetables to soften and absorb flavors.
  3. Add Remaining Aromatics: Stir in the remaining 2 minced garlic cloves and the chopped scallions. Cook uncovered, stirring occasionally for another 3-4 minutes until the vegetables are tender but still slightly crisp. Remove from heat and let the mixture cool slightly before assembling.
  4. Soften the Rice Paper: Fill a deep plate with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it softens and becomes pliable. Place the softened wrapper flat on a large plate or clean surface.
  5. Assemble the Spring Rolls: Place 2-3 tablespoons of the cooled tofu and vegetable mixture in the center of the rice paper. Fold the sides over the filling and then roll tightly like a burrito to seal.
  6. Pan-Fry the Rolls: Heat a nonstick pan over medium heat and add a small amount of oil. Place the spring rolls seam side down first to seal them. Cook for 1-2 minutes on each side, flipping twice per side, until they turn golden brown and crispy.
  7. Repeat and Serve: Continue assembling and frying the remaining spring rolls. Serve immediately with your favorite spicy sauce, such as sriracha or a spicy-sweet dipping sauce.

Notes

  • If you prefer a completely raw version, skip the pan-frying step and serve the rolls fresh.
  • Spinach is optional but adds great nutrition and color.
  • Adjust the chili powder and garlic quantities to suit your spice preference.
  • Tamari sauce is gluten-free soy sauce; ensure the tamari you purchase is certified gluten-free if needed.
  • Make sure not to over-soak the rice paper or it will become too fragile to roll.
  • Serve spring rolls immediately after frying to enjoy the crisp texture.
