Ingredients

Main Ingredients

  • 3 tablespoons olive oil or avocado oil
  • 1 cup onion, diced
  • 3 teaspoons garlic, minced
  • 1½ cups carrots, diced
  • 1½ cups celery, diced
  • 2 cups dry lentils, rinsed
  • 28 ounces crushed tomatoes
  • 1 teaspoon cumin
  • 2 teaspoons paprika
  • 3 large bay leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 cups vegetable broth

For Serving

  • 2 tablespoons lemon juice
  • fresh parsley, chopped

Instructions

  1. Prepare the Base: In a large stock pot over medium heat, add the oil. Sauté the diced onions for 3-4 minutes until translucent.
  2. Add Vegetables: Stir in the minced garlic, diced carrots, and diced celery. Cook for about 5 minutes, stirring occasionally, until the vegetables soften.
  3. Combine Ingredients: Rinse lentils under cool water and add to the pot. Pour in crushed tomatoes, cumin, paprika, bay leaves, salt, pepper, and vegetable broth.
  4. Simmer: Bring the mixture to a simmer. Cover with a lid and reduce heat to medium-low. Let it simmer gently for 35-45 minutes, stirring occasionally. Ensure there is enough liquid, adding broth as needed to prevent sticking.
  5. Finish and Serve: Remove from heat, stir in lemon juice, and adjust seasoning with additional salt and pepper if desired. Ladle into bowls and garnish with chopped fresh parsley.
