Perfect as a light meal or a starter, this easy-to-make soup is nourishing and customizable based on your preferred consistency.

Ingredients

Vegetables and Aromatics

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 large carrot, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • ½ cabbage, chopped

Herbs and Seasonings

  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • Cracked black pepper, to taste
  • ¼ cup roughly chopped fresh parsley

Liquids

  • 1 (14-ounce) can diced tomatoes
  • 4 to 6 cups vegetable broth (depending on desired thickness)
  • 1 to 2 tablespoons lemon juice

Instructions

  1. Cook the vegetables: Heat the olive oil in a large pot over medium-high heat. Add the diced onion, carrot, and celery. Sauté them for 4 to 5 minutes until they start to soften and become fragrant.
  2. Add the aromatics: Incorporate the minced garlic along with the dried oregano, dried basil, and salt. Stir continuously and cook for about 1 minute to release their aromas without burning the garlic.
  3. Cook the cabbage: Add the chopped cabbage to the pot. Stir frequently and let it sweat for 5 minutes, allowing the cabbage to soften and reduce in volume.
  4. Simmer the soup: Pour in the vegetable broth and the canned diced tomatoes (including their juice). Bring the mixture to a gentle simmer and cook uncovered for 10 minutes, or until all the vegetables have softened to your preferred texture.
  5. Finish and serve: Remove the pot from the heat. Stir in the lemon juice, fresh parsley, and adjust the seasoning with cracked black pepper. Give everything a good mix and serve hot.

Notes

  • To store the soup, allow it to cool completely before transferring it to an airtight container.
  • Refrigerate and consume within 4 to 5 days for optimal freshness.
  • You can adjust the amount of vegetable broth to make the soup thicker or more brothy according to your preference.
  • Adding lemon juice at the end helps brighten the flavors without overpowering the soup.
