These High Protein Egg Bites are a delicious and nutritious breakfast option packed with turkey sausage, cottage cheese, and baby spinach. Baked to perfection, they make for a convenient, protein-rich meal that can be prepared ahead and enjoyed throughout the week.

Ingredients

Sausage

  • 12 turkey sausage links, fully cooked

Egg Mixture

  • 4 large eggs
  • ½ cup egg whites
  • 1 cup cottage cheese, 2%
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

Cheese and Vegetables

  • ½ cup cheddar cheese, shredded, divided (¼ cup for mixture, ¼ cup for topping)
  • 2 oz baby spinach

Instructions

  1. Preheat and Prep: Preheat your oven to 400 degrees F (204 degrees C) and spray a muffin tin with non-stick spray to ensure easy removal of the egg bites later.
  2. Prepare Sausage Base: Chop the fully cooked turkey sausage links into small pieces and evenly distribute them among the muffin cups, setting aside for now.
  3. Blend Egg Mixture: In a blender, combine whole eggs, egg whites, cottage cheese, half of the shredded cheddar cheese (¼ cup), salt, black pepper, garlic powder, and onion powder. Pulse a few times until the mixture is smooth and creamy.
  4. Add Spinach: Add a handful of baby spinach to the blender and pulse a few more times to finely chop the spinach and incorporate it evenly into the egg mixture.
  5. Fill Muffin Cups: Pour the egg and spinach mixture into each muffin cup, filling them about three-quarters full over the sausage pieces.
  6. Top with Cheese: Sprinkle the remaining shredded cheddar cheese (¼ cup) on top of each filled muffin cup to create a cheesy crust during baking.
  7. Bake: Place the muffin tin in the preheated oven and bake for 12 to 15 minutes, or until the eggs are fully set and lightly golden on top.
  8. Cool and Store: Allow the egg bites to cool slightly in the tin before carefully removing. Once fully cooled, store them in the refrigerator for up to 7 days for a quick and healthy meal option.
