This High-Protein Fried Pickle Dip is a creamy, tangy, and savory appetizer combining low-fat cottage cheese, Greek yogurt, and chopped dill pickles, topped with a crispy toasted panko breadcrumb “fried” topping. It’s a delicious, healthier dip option packed with protein and flavor, perfect for serving at parties or snack time.

Ingredients

Dip

  • 1 cup low-fat cottage cheese (2% fat recommended)
  • ½ cup plain nonfat Greek yogurt
  • ¾ cup finely chopped dill pickles
  • 1–2 tablespoons pickle juice, to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried dill or 1 tablespoon fresh dill, finely chopped
  • Pinch of black pepper

“Fried” Topping

  • ¼ cup panko breadcrumbs (gluten-free if needed)
  • 1 teaspoon butter or olive oil
  • Optional: pinch of garlic powder or smoked paprika

Instructions

  1. Blend Cottage Cheese: Add the low-fat cottage cheese to a blender or food processor and blend until completely smooth, creating a creamy base for the dip.
  2. Mix Ingredients: Transfer the smooth cottage cheese into a bowl. Stir in the plain nonfat Greek yogurt, finely chopped dill pickles, pickle juice, garlic powder, onion powder, dill, and a pinch of black pepper until well combined.
  3. Toast Panko Breadcrumbs: Heat a small skillet over medium heat. Add the panko breadcrumbs along with the butter or olive oil and optional seasoning like garlic powder or smoked paprika. Toast while stirring frequently until the breadcrumbs turn golden and crisp, about 2–3 minutes. Remove from heat.
  4. Assemble Dip: Spoon the prepared dip into a serving bowl. Evenly sprinkle the toasted panko breadcrumbs over the top to add a crispy, “fried” texture without actual frying.
  5. Serve or Store: Enjoy the dip immediately for best texture, or refrigerate until ready to serve. If storing, keep the toasted panko separate and add just before serving for optimal crunchiness.

Notes

  • You can use nonfat, low-fat, or full-fat versions of yogurt and cottage cheese, but nutritional values are based on nonfat Greek yogurt and low-fat cottage cheese.
  • Store leftover dip in an airtight container in the refrigerator for up to 4 days.
  • For best texture, keep toasted panko breadcrumbs separate when refrigerating and sprinkle on the dip right before serving.
