Ingredients

Dough Ingredients

  • 410g low-fat Greek yogurt
  • 400g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp salt

Filling Ingredients

  • 120g pizza sauce (15g per pocket)
  • 160g low-fat cheese (20g per pocket)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking tray with parchment paper to prevent sticking and ensure even baking.
  2. Mix Dough: In a large bowl, combine the flour, baking powder, Italian seasoning, garlic powder, and salt. Stir in the low-fat Greek yogurt and knead the mixture for 2 to 3 minutes until a smooth dough forms that holds together well.
  3. Shape Dough: Divide the dough evenly into 8 balls. Roll each ball into a 6-inch oval shape on a lightly floured surface to prepare for filling.
  4. Fill Hot Pockets: On one half of each oval, spoon about 15g of pizza sauce and 20g of low-fat cheese, leaving a ½-inch border around the edges to allow for sealing.
  5. Fold and Seal: Fold the dough over to cover the filling, pressing the edges firmly with a fork to seal. For a stronger seal and to prevent any leaks, dab a little water along the edges before folding.
  6. Bake: Place the sealed hot pockets on the prepared baking tray and bake in the preheated oven for 18–20 minutes until golden brown and cooked through.
  7. Rest: Remove the hot pockets from the oven and let them rest for 5 minutes to cool slightly and allow filling to set before serving.

Notes

  • Seal the edges tightly to avoid cheese leaking during baking.
  • Avoid overfilling to ensure the pockets seal properly and to prevent bursting.
  • Allow hot pockets to cool completely before storing to maintain texture and prevent sogginess.
