This High Protein Tomato Soup is a creamy, comforting dish that combines the rich flavors of tomatoes and herbs with the added benefit of cottage cheese for extra protein. Perfect for a nutritious lunch or dinner, this soup is easy to prepare on the stovetop and can be garnished with parmesan and fresh basil for an elevated touch.

Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • ½ teaspoon kosher salt
  • 2 tablespoons minced garlic
  • 1 tablespoon tomato paste
  • 2 teaspoons dried basil
  • 1 tablespoon sugar
  • 2 cans of canned whole tomatoes (two 28 oz cans)
  • 3 cups vegetable broth, low sodium
  • 1½ cup cottage cheese, 2% MF
  • Pepper, to taste

Optional Garnishes

  • Parmesan cheese
  • Fresh basil

Instructions

  1. Sauté Onions: Heat 1 tablespoon of olive oil over medium heat in a large pot. Add the diced onions and cook, stirring occasionally, until they soften and become translucent, approximately 4 to 5 minutes.
  2. Add Garlic and Salt: Add 2 tablespoons of minced garlic to the pot and cook for another minute to release its aroma. Then sprinkle in ½ teaspoon of kosher salt to enhance the flavors. If the pot looks dry, deglaze with a splash of vegetable broth to lift the browned bits from the bottom.
  3. Add Tomato Paste and Seasonings: Stir in 1 tablespoon of tomato paste and cook for about one minute to concentrate its flavor. Then add 1 tablespoon sugar and 2 teaspoons dried basil, mixing well to combine all ingredients evenly.
  4. Add Tomatoes and Broth: Pour in the two 28-ounce cans of whole tomatoes with their liquid, along with 3 cups of low sodium vegetable broth. Stir gently to combine. Cover the pot and let the soup simmer on low heat for 20 minutes, stirring occasionally. Adjust salt to taste at this stage.
  5. Blend Soup with Cottage Cheese: Carefully transfer the soup in batches to a blender. Add 1½ cups of 2% milk fat cottage cheese to each batch and blend until smooth and creamy. To handle hot soup safely, remove the center part of your blender lid and cover the opening with a kitchen towel to allow steam to escape without splattering.
  6. Serve: Pour the blended soup back into the pot to warm if needed. Serve hot, topped with freshly ground pepper, and optionally garnished with parmesan cheese and fresh basil leaves for an extra burst of flavor.

Notes

  • When blending hot liquids, always allow steam to escape to prevent pressure buildup and splattering.
  • Adjust the thickness of the soup by adding more vegetable broth if desired.
  • For a richer flavor, you can substitute vegetable broth with chicken broth if not wanting a vegetarian option.
  • Use low sodium broth to control the saltiness of the soup.
  • Parmesan and fresh basil add great texture and taste but are optional.
